List of Ingredients
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup mushrooms, chopped
1 ounce dried shiitake mushrooms, reconstituted
1/4 stick (1 ounce) unsalted butter
1 cup cooked rice
3/4 cup walnuts, toasted
1/2 cup cashews
3/4 cup peanuts
2 large eggs, beaten
2 tablespoons chopped fresh parsley
1/2 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried sage
1 cup cottage cheese
12 ounces Cheddar cheese, shredded
Preheat oven to 350 degrees. In large saucepan, saute the onion, garlic, and mushrooms in the butter. Remove from heat and combine the rice with the mushroom mixture.
Add the remaining ingredients and mix well. Press the mixture into a loaf pan and bake for 1 to 1 1/2 hours.
Serves 5.
