    Grilled Quail with Honey Chipolte Sauce

    Marinade quail in jerk marinade for 24 hours. Grill guail. Serve with Honey chipolte sauce


    Honey chipolte sauce:

    1 cup honey

    2 cups water

    1/2 cup vinegar

    1/2 cup brown sugar

    2 tablespoon minced fresh garlic

    2 tablespoon chili chipolte juice

    1 teaspoon salt

    Mix all the ingredients in a heavy sauce pan and bring to boil and thicken with cornstarch.

    Jerk Marinade

    5 table spoons fresh minced garlic

    3 oz. fresh minced ginger

    1 each white diced onion

    1/2 cup fresh lemon juice

    2 cups soy sauce

    1 quart salad oil

    1 tablespoon black pepper

    1 tablespoon cumin

    1 tablespoon coriander

    2 tablespoon crushed red pepper

    2 cups sugar

    2 tablespoon basil

    1 tablespoon allspice

    2 oz. Worcestershire sauce

    1 cup fresh chopped cilantro

    2 cups pineapple juice

    Combine liquid ingredients, combine dry ingredients, chopped vegetables in food processor, mix together.
