Smoked Venison Sausage and Rice

List of Ingredients
5 (6-inch) links smoked venison sausage, finely diced
1 finely diced green bell pepper
1 finely diced medium onion
1 teaspoon minced garlic
1 (28-ounce) can chopped tomatoes
2 cups uncooked jasmine rice
3 cups water
Cajun seasoning to taste
Place all ingredients except Cajun seasoning in a Dutch oven or heavy pot. Cover and cook on stove over low heat about 25 minutes or until rice is done. Season to taste with Cajun seasoning. Makes 6 servings.
