Add Grilled boneless skinless chicken breast for a filling light meal.
List of Ingredients
- Eggplant 1 medium (chinese or regular)
- Squash 1 medium
- Green Pepper 1 medium
- Onion 1 small
- Zucchini 1 medium
- Garlic cloves 4 - diced
- 1 can diced tomatoes (with any additional seasonings desired)
- Salt and Pepper to taste
- Pam Olive oil - 2 sprays
- Italian seasoning 2 tsp
Instructions
- Thick chunk vegetables.
- Spray saucepan with Pam.
- Add vegetables, canned tomatoes and seasonings.
- Simmer until vegetables at your desired consistency.
Final Comments
You can use fresh tomatoes in the summer time. Just chunk them up and discard any "peelings" afterwards.
