    This lasagna is fast (no pre-cooking the noodles!), versatile, and really really good.

    1 pound cottage cheese
    1 1/2 cups mozzarella cheese, grated
    1 egg
    1 pkg frozen spinach(10 oz), thawed, well drained
    1 teaspoon salt
    3/4 teason oregano
    1/8 teaspoon pepper
    1 jar spaghetti sauce (26-32 oz)
    8 ounces lasagna noodle, uncooked
    1 cup water


    Recipe



    In large bowl mix cottage cheese, 1 cup cheese, egg, spinach, and seasonings.

    In 13 x 9 pan, layer 1/2 cup sauce, 1/3 of the noodles, and 1/2 cheese mixture. Repeat.

    Top with remaining noodles. Sprinkle with 1/2 c. remaining cheese.

    Pour water around the edges of the baking dish (I put the water in the sauce jar and shake it up to get all the sauce).

    Cover lightly with foil and bake at 350 deg. for 1 hr. 15 min. or until bubbling.

    Let stand 15 min. before serving.

    Variation: I always add mushrooms and some cooked hamburger or ground turkey seasoned with oregano and onion.
    As Kathy suggested, layer with other shredded or sliced veggies like carrots, zucchini, etc.
