    This is a quick nutritious meal. We served it up with two homemade dressings.

    List of Ingredients




    1 lb small red/blue/fingerling potatoes, cooked and cut into quarters
    1 lb haricot verts
    1 medium red onion, thinly sliced
    3 medium tomatoes, quartered
    1 C olives (Nicoise) pitted or Kalamata
    3 eggs, hardboiled, sliced
    2 6-oz cans tuna, drained, flaked
    1 2-oz can anchovy fillets

    optional:
    capers
    1 large fennel bulb, sliced
    1 can artichoke hearts, quartered
    parsley
    chives

    Dressing #1
    ½ C olive oil
    ¼ C red wine vinegar
    1 tsp sugar
    ¾ tsp salt
    ¼ tsp pepper
    optional: ½ tsp Dijon mustard
    1 clove garlic, minced

    Dressing #2 (Wolfgang Puck)
    ¼ c lemon juice
    ¼ c red wine vinegar
    ¼ c Dijon mustard
    2 T minced garlic
    2 T minced shallots
    1-1/2 c extra virgin olive oil
    kosher salt
    pepper
    sugar
