1 cucumber (English or regular), peeled, seeded and minced
1 clove garlic, crushed
2 C plain yogurt (I use nonfat…all the benefits, none of the fat)
¼ tsp salt
fresh mint (optional)

Mix all ingredients together. Serve as dip with vegetables or pita bread; an accompaniment for chicken, beef, lamb; as a salad dressing or spread for a sandwich.
