Thai-Style Shrimp and Eggplant Wraps

So simple, but simply wonderful.
List of Ingredients
1 t olive oil
1 T minced peeled fresh ginger
2 C red bell pepper strips
2 C julienne peeled eggplant
¾ lb medium shrimp, peeled and deveined
1 C snow peas
4 cloves garlic, minced
1/3 C sliced green onions
¼ C shopped fresh basil
¼ C low-sodium soy sauce
1 T brown sugar
1 T grated lemon rind
4 8-inch flour tortillas
Recipe
Heat oil in a large nonstick skillet over medium-high heat. Add ginger; stir-fry 30 seconds. Add bell pepper and eggplant; stir-fry 4 minutes. Add shrimp, snow peas, and garlic; stir-fry 2 minutes. Add onions, basil, soy sauce, brown sugar and lemon rind. Stir-fry 2 minutes. Warm tortillas according to package directions. Spoon shrimp mixture onto tortillas; roll up. Serves 4
