Pesto Sauce

List of Ingredients
- 1 bunch fresh basil
- 1 bunch fresh parsley
- 2 cloves garlic
- 1/4 C pine nuts
- 1/4 C parmesan cheese
- 1/2 - 3/4 C extra virgin olive oil
Instructions
- Rinse basil and parsley. Pat dry. Remove and discard stems.
- In a blender, combine basil, parsley and garlic. Pulse blender until ingredients are chopped, stopping when necessary to scrape down sides.
- Add pine nuts and continue to pulse until ingredients are chopped.
- Add 1/4 cup of olive oil in a small stream with blender on puree, stopping to scrape down sides.
- With blender on puree, add parmesan cheese, alternating with olive oil, until desired consistency is reached. Add more olive oil as needed.
- Use to top pasta, pizza, or as a dip. Store unused portion in airtight container for up to 5 days. Bring to room temperature before using. If sauce thickens, add a little olive oil and stir before using.
