Mu Shu Chicken Quesadillas

Recipe Introduction
So simple, so good. This yummy quesadilla brings a Chinese food favorite together with a Mexican twist.
List of Ingredients
8 flour tortillas
3 T oil
2 T bean sprouts
2 T red cabbage, shredded
3 T bok choy, shredded
2 T sweet onions, chopped
2 T mushrooms, sliced
2 T carrots, 1 ½” thin julienne
2 T red peppers, 1 ½” thin julienne
1 T ginger, peeled and minced
1 T garlic, minced
2 T green onions, minced
2 T cilantro, minced
½ lb cooked chicken or turkey breast
8 T hoisin sauce
1 C pepper jack cheese, grated
3 T butter
Recipe
In oil, sauté vegetables, garlic, ginger until tender (2 – 3 min). Add green onion, cilantro, chicken. Toss to heat. Remove from pan. Lay 4 tortillas on work surface. Spread hoisin sauce over entire surface. Place vegetable mixture on top, sprinkle with grated cheese and cover with second tortillas creating a sandwich. Heat large pan on medium heat, add 1 t butter to melt and add quesadilla, cooking until golden brown. Flip over and cook until golden. Cut each quesadilla in quarters. Serve with salsa and guacamole.
