    List of Ingredients


    • 1 1/2 CUPS EGG WHITES, ABOUT 10 LARGE EGGS
    • 1 1/2 CUPS SUGAR, DIVIDED
    • 3/4 CUPS SIFTED CAKE FLOUR
    • 1/4 CUP COCOA POWDER
    • 1 1/2 TEASPOONS CREAM OF TARTAR
    • 1/4 TEASPOON SALT
    • 1 TEASPOON ALMOND EXTRACT
    • 1/2 TEASPOON VANILLA


    Instructions


    1. PREHEAT OVEN TO 375°.
    2. SET EGG WHITES AT ROOM TEMPERATURE FOR 1 HOUR.
    3. SIFT FLOUR AND COCOA WITH 3/4 CUPS SUGAR TWO TIMES, SET ASIDE.
    4. BEAT EGG WHITES WITH CREAM OF TARTAR, SALT ALMOND EXTRACT AND VANILLA UNTIL STIFF ENOUGH TO FORM SOFT PEAKS BUT STILL MOIST AND GLOSSY.
    5. ADD REMINING 3/4 CUP SUGAR, 2 TABLESPOONS AT A TIME, CONTINUE TO BEAT UNTIL EGG WHITES HOLD A NICE STIFF PEAK.
    6. SIFT 3/4 CUP OF FLOUR MIXTURE OVER WHITES, FOLD IN WITH A RUBBER SPATULA IN AN OVER AND UNDER MOTION. REPEAT THIS PROCEDURE FOLDING IN REMAINING FLOUR BY FOURTHS.
    7. POUR INTO AN UNGREASED 10" ANGEL FOOD PAN OR TUBE PAN FOR 35 MINUTES OR UNTIL DONE.
    8. COVER WITH FOIL LAST 10 MINUTES, IF DESIRED TO PREVENT BROWNING. REMOVE FROM OVEN AND INVERT ONTO A STURDY BOTTLE OR IF YOUR PAN HAS THE FEET TURN THE PAN ON THEM.LET COOL COMPLETELY.
    9. 10 TO 12 SERVINGS
