    MELTED CHEESE DIP


    List of Ingredients


    • 2 POUNDS MONTEREY JACK CHEESE, GRATED OR SHREDDED
    • 1/4 CUP FLOUR
    • 1 1/3 CUPS BEER
    • 1/2 CUP CHOPPED FRESH CILANTRO, OPTIONAL
    • 4 TEASPOONS MINCED JALAPENO CHILIES


    Instructions


    1. PLACE CHEESE IN A LARGE BOWL. ADD FLOUR AND TOSS TO COAT THE CHEESE WELL. SET ASIDE.

    2. IN A LARGE HEAVY SAUCEPAN, BRING BEER TO A BOIL. REDUCE THE HEAT TO LOW AND ADD A HANDFUL OF CHEESE TO BEER, STIR CONSTANTLY UNTIL CHEESE MELTS. REPEAT WITH REMAINING CHEESE, STIRRING UNTIL THICK AND CREAMY. (DO NOT BOIL). STIR IN CILANTRO ( IF USING) AND CHILIES. SEASON WITH SALT AND PEPPER. (OPTIONAL).

    3. POUR CHEESE MIXTURE INTO A FONDUE POT OR IN A MINI-SLOW COOKER TO KEEP WARM.

    4. SERVE WITH HOMEMADE TORTILLA OR STORE BOUGHT CHIPS.
