    SAVORY FRENCH TOAST


    List of Ingredients


    • 2 TABLESPOONS FLOUR
    • 3/4 TEASPOON BAKING POWDER
    • 1 1/2 TEASPOONS COARSE SALT
    • 3 LARGE EGGS
    • 1 1/3 CUPS MILK
    • 3 1/2 OUNCES COARSELY GRATED PARMESAN CHEESE, 1 1/4 CUPS
    • 1 TABLESPOON SWEET BUTTER FOR BUTTERING PAN
    • TWELVE OUNCE LOAF OF FRENCH OR ITALIAN BREAD, CUT INTO 6 ONE INCH THICK SLICES
    • 1 MEDIUM TOMATO, CUT INTO 1/4" DICE
    • 1/3 CUP CHOPPED FRESH BALIL


    Instructions


    1. PREHEAT OVEN TO 350°. ADJUST RACK TO CENTER OF OVEN.
    2. IN A SMALL BOWL, COMBINE FLOUR, BAKING POWDER AND SALT. SET ASIDE.
    3. IN A LARGE BOWL, WHISK TOGETHER THE EGGS AND MILK. WHISK THE FLOUR MIXTURE INTO EGG MIXTURE UNTIL THE BATTER IS SMOOTH. WHISK IN CHEESE. ( BATTER WILL BE LUMPY AND LOOK CURDLED).
    4. GENEROULSY BUTTER A 13 X 9" BAKING PAN. SET ASIDE.
    5. USING TONGS AND DIP THE BREAD SLICES INTO BATTER, COATING WELL. ARRANGE THE SLICES SIDE BY SIDE IN PREPARED PAN. SET ASIDE.
    6. STIR DICED TOMATOES AND CHOPPED BASIL INTO THE REMAINING BATTER. POUR BATTER OVER THE SLICES.
    7. BAKE UNTIL GOLDEN BROWN, 30 TO 40 MINUTES. REMOVE FROM OVEN AND COOL 5 TO 10 MINUTES BEFORE CUTTING.
    8. INVERT ONTO A COOLING RACK AND TURN RIGHT SIDE UP ONTO A CUTTING BOARD.
    9. USING A KNIFE OR COOKIE CUTTER, CUT INTO BITE SIZE PIECES OR SHAPES. SERVE WARM
