SAVORY FRENCH TOAST
List of Ingredients
- 2 TABLESPOONS FLOUR
- 3/4 TEASPOON BAKING POWDER
- 1 1/2 TEASPOONS COARSE SALT
- 3 LARGE EGGS
- 1 1/3 CUPS MILK
- 3 1/2 OUNCES COARSELY GRATED PARMESAN CHEESE, 1 1/4 CUPS
- 1 TABLESPOON SWEET BUTTER FOR BUTTERING PAN
- TWELVE OUNCE LOAF OF FRENCH OR ITALIAN BREAD, CUT INTO 6 ONE INCH THICK SLICES
- 1 MEDIUM TOMATO, CUT INTO 1/4" DICE
- 1/3 CUP CHOPPED FRESH BALIL
Instructions
- PREHEAT OVEN TO 350°. ADJUST RACK TO CENTER OF OVEN.
- IN A SMALL BOWL, COMBINE FLOUR, BAKING POWDER AND SALT. SET ASIDE.
- IN A LARGE BOWL, WHISK TOGETHER THE EGGS AND MILK. WHISK THE FLOUR MIXTURE INTO EGG MIXTURE UNTIL THE BATTER IS SMOOTH. WHISK IN CHEESE. ( BATTER WILL BE LUMPY AND LOOK CURDLED).
- GENEROULSY BUTTER A 13 X 9" BAKING PAN. SET ASIDE.
- USING TONGS AND DIP THE BREAD SLICES INTO BATTER, COATING WELL. ARRANGE THE SLICES SIDE BY SIDE IN PREPARED PAN. SET ASIDE.
- STIR DICED TOMATOES AND CHOPPED BASIL INTO THE REMAINING BATTER. POUR BATTER OVER THE SLICES.
- BAKE UNTIL GOLDEN BROWN, 30 TO 40 MINUTES. REMOVE FROM OVEN AND COOL 5 TO 10 MINUTES BEFORE CUTTING.
- INVERT ONTO A COOLING RACK AND TURN RIGHT SIDE UP ONTO A CUTTING BOARD.
- USING A KNIFE OR COOKIE CUTTER, CUT INTO BITE SIZE PIECES OR SHAPES. SERVE WARM
