ALMOND BISCOTTI
List of Ingredients
- 1 CUP SUGAR
- 1/2 CUP SWEET MELTED BUTTER
- 3 TABLESPOONS BRANDY
- 1 TEASPOON VANILLA
- 1 TEASPOON ALMOND EXTRACT
- 1 CUP CHOPPED ALMONDS
- 3 EGGS
- 2 1/2 CUPS FLOUR
- 1/2 TABLELSLPOON BALING POWDER
- 1/4 TEASPOON SALT
Instructions
- PREHEAT OVEN TO 350°.
- MIX SUGAR WITH BUTTER, BRANDY, VANILLA, ALMOND EXTRACT, NUTS AND EGGS, MIXING WELL TO BLEND.
- STIR IN FLOUR, BAKING POWDER AND SALT. MIX UNTIL DOUGH FORMS. FORM DOUGH INTO A LONG LOG, PLACE ON A COOKIE SHEET AND BAKE FOR 20 TO 30 MINUTES OR UNTIL FIRM AND SOFT CAKE LIKE. REMOVE FROM OVEN AND LET COOL SLIGHTLY.
- WHEN COOL ENOUGH TO HANDLE, SLICE INTO 1/2" DIAGONAL SLICES AND RETURN TO COOKIE SHEET. BAKE FOR 15 TO 25 MINUTES, TURNING ONCE, UNTIL BOTH SIDES ARE LIGHTLY BROWNED AND TOASTED. COOL THOROUGHLY AND STORE IN AN AIRTIGHT CONTAINER.
