    THIS IS ANOTHER ONE OF MY FAVORITES.


    List of Ingredients


    • 2 CUPS FLOUR
    • 1 CUP SUGAR
    • 1/4 CUP UNSWEETENED COCOA POWDER
    • 1/2 TEASPOON BAKING POWDER
    • 1/2 TEASPOON BAKING SODA
    • 1/2 TEASPOON SALT
    • 1/2 TEASPOON GROUND CINNAMON
    • 1/3 CUP CHOPPED PECANS OR WALNUTS
    • 2 TEASPOONS INSTANT COFFEE MIXED IN 2 TEASPOONS OF HOT WATER
    • 1 TEASPOON VANILLA EXTRACT
    • 3 EGGS


    Instructions


    1. SIFT TOGETHER THE FLOUR, SUGAR, COCOA, BAKING POWDER, BAKING SODA, SALT AND CINNAMON. ADD THE NUTS, INSTANT COFFEE MIXTURE, VANILLA AND EGGS. STIR WITH A WOODEN SPOON TO COMPLETELY BLEND IN ALL INGREDIENTS.
    2. TURN OUT ONTO A LIGHTLY FLOURED SURFACE AND KNEAD LIGHTLY 7 OR 8 TIMES. SHAPE DOUGH INTO A 16" LONG ROLL
    3. PLACE ROLL ON A BAKING SHEET LINED WITH WAXED OR PARCHMENT PAPER AND FLATTEN TO ABOUT 1" THICKNESS.
    4. BAKE IN A PREHEATED 325° OVEN FOR APPROXIMATELY 30 MINUTES.
    5. REMOVE THE LOG FROM THE BAKING SHEET VERY CAREFULLY WITH THE PAPER AND LET COOL FOR 10 MINUTES. CUT THE LOG DIAGONALLY INTO 30 SLICES AND PLACE CUT SIDE DOWN ON BAKING SHEET.
    6. BAKE FOR 10 MINUTES. TURN COOKIES OVER AND BAKE AN ADDITIONAL 10 MINUTES ( THEY WILL BE SLIGHTLY SOFT IN CENTER BUT WILL FIRM UP AS THEY COOL)HANDLE VERY CAREFULLY
    7. REMOVE COOKIES FROM BAKING SHEET AND LET COOL COMPLETELY ON A WIRE RACK. STORE IN AN AIRTIGHT CONTAINER AT ROOM TEMPERATURE. CAN ALSO BE FROZEN UP TO 3 MONTHS
