    CHOCOLATE CHIP ALMOND BISCOTTI


    List of Ingredients


    • 1 CUP OF SLICED ALMONDS
    • 2 3/4 CUPS FLOUR
    • 1 1/2 TEASPOONS BAKING POWDER
    • 1/4 TEASPOON SALT
    • 1/2 CUP OF SOFTENED BUTTER
    • 1 CUP SUGAR
    • 3 LARGE EGGS
    • 3 TABLESPOONS AMMARETTO OR ALMOND EXTRACT
    • 1 TABLESPOON WATER
    • 1 CUP MINI SEMI-SWEET CHOCOLATE CHIPS


    Instructions


    1. PREHEAT OVEN TO 350°

    2. SPREAD ALMONDS ON A BAKING SHEET AND BAKE FOR APPROXIMATELY 8 TO 10 MINUTES OR UNTIL GOLDEN BROWN, STIRRING FREQUENTLY. REMOVE ALMONDS FROM BAKING SHEET AND COOL. COARSELY CHOP ALMONDS TO MEASURE 3/4 CUP.

    3. PLACE FLOUR, BAKING POWDER AND SALT IN MEDIUM BOWL, STIR TO COMBINE.

    4. BEAT BUTTER AND SUGAR IN A LARGE BOWL WITH ELECTRIC MIXER ON MEDIUM SPEED UNTIL LIGHT AND FLUFFY. BEAT IN EGGS, ONE AT A TIME. BEAT IN LIQUEUR, EXTRACT AND ADD WATER. GRADUALLY ADD FLOUR MIXTURE. BEAT AT LOW SPEED, SCRAPING DOWN THE SIDE OF BOWL OCCASIONALLY. STIR IN CHIPS AND ALMONDS.

    5. DIVIDE DOUGH INTO FOURTHS. SPREAD EACH QUARTER EVENLY DOWN CENTER OF WAXED PAPER. USING WAXED PAPER TO HOLD DOUGH, ROLL BACK AND FORTH TO FORM 15" LOG. WRAP LOG IN PLASTIC WRAP AND REFRIGERATE UNTIL FIRM APPROXIMATELY 2 HOURS.

    6. PREHEAT OVEN TO 375°. LIGHTLY GREASE COOKIE SHEET LINED WITH PARCHMENT OR WAXED PAPER. UNWRAP AND PLACE EACH LOG ON A PREPARED COOKIE SHEET. WITH FLOURED HANDS, SHAPE EACH LOG 2" WIDE AND 1/2" THICK. BAKE FOR 15 MINUTES. REMOVE FROM OVEN AND LET COOL SLIGHTLY AT ROOM TEMPERATURE.

    7. CUT EACH LOG WITH A SHARP KNIFE INTO 1" THICK DIAGONAL SLICES, BEING CAREFUL NOT TO BREAK THE DOUGH. PLACE SLICES CUT SIDE UP ON COOKIE SHEET. BAKE CUT COOKIES FOR 7 MINUTES. TURN COOKIES ONTO THE OTHER CUT SIDE AND BAKE FOR AN ADDITIONAL 7 MINUTES. MAKE SURE THE COOKIES ARE A GOLDEN BROWN AND DRY. REMOVE COOKIES TO WIRE RACKS AND COOL COMPLETELY.

    8. STORE IN AN AIR TIGHT CONTAINER AT ROOM TEMPERATURE OR YOU CAN FREEZE UP TO THREE MONTHS.
