LEMON ALMOND BISCOTTI
List of Ingredients
- 2 1/2 CUPS FLOUR
- 1 TEASPOON BAKING SODA
- 1/2 TEASPOON BAKING SODA
- 1 TEASPOON SALT
- 4 LARGE EGGS
- 3/4 CUPS SUGAR
- 1 TABALESPOON LEMON ZEST
- 1 1/2 TEASPOON FRESH LEMON JUICE
- 1 CUP ALMONDS TOASTED
Instructions
- PREHEAT OVEN TO 325°. LINE A BAKING TRAY WITH PARACHMENT PAPER AND SET ASIDE.
- SIFT TOGETHER THE FLOUR, BAKING POWDER, BAKING SODA AND SALT IN A LARGE BOWL.
- IN A BOWL, BEAT EGGS AND SUGAR UNTIL LIGHT IN COLOR. BEAT IN ZEST AND LEMON JUICE.
- SLOWLY ADD DRY INGREDIENTS TO EGG MIXTURE AND MIX WELL. ADD NUTS.
- TURN DOUGH ONTO A LIGHTLY FLOURED SURFACE AND KNEAD UNTIL SMOOTH, 2 MINUTES. DO NOT OVERWORK DOUGH.
- DIVIDE THE DOUGH IN HALF, SHAPE INTO 2 LOGS. BAKE FOR 30 MINUTES OR UNTIL GOLDEN BROWN. REMOVE FROM OVEN AND ALLOW TO COOL COMPLETELY.
- REDUCE OVEN TO 300°.
- CUT LOGS INTO 1/2" SLICES ON A DIAGONAL. RETURN TO BAKING SHEET AND BAKE UNTIL TOASTED, ABOUT 20 TO 30 MINUTES.
