    List of Ingredients


    • 2 1/2 CUPS FLOUR
    • 1 TEASPOON BAKING SODA
    • 1/2 TEASPOON BAKING SODA
    • 1 TEASPOON SALT
    • 4 LARGE EGGS
    • 3/4 CUPS SUGAR
    • 1 TABALESPOON LEMON ZEST
    • 1 1/2 TEASPOON FRESH LEMON JUICE
    • 1 CUP ALMONDS TOASTED


    Instructions


    1. PREHEAT OVEN TO 325°. LINE A BAKING TRAY WITH PARACHMENT PAPER AND SET ASIDE.
    2. SIFT TOGETHER THE FLOUR, BAKING POWDER, BAKING SODA AND SALT IN A LARGE BOWL.
    3. IN A BOWL, BEAT EGGS AND SUGAR UNTIL LIGHT IN COLOR. BEAT IN ZEST AND LEMON JUICE.
    4. SLOWLY ADD DRY INGREDIENTS TO EGG MIXTURE AND MIX WELL. ADD NUTS.
    5. TURN DOUGH ONTO A LIGHTLY FLOURED SURFACE AND KNEAD UNTIL SMOOTH, 2 MINUTES. DO NOT OVERWORK DOUGH.
    6. DIVIDE THE DOUGH IN HALF, SHAPE INTO 2 LOGS. BAKE FOR 30 MINUTES OR UNTIL GOLDEN BROWN. REMOVE FROM OVEN AND ALLOW TO COOL COMPLETELY.
    7. REDUCE OVEN TO 300°.
    8. CUT LOGS INTO 1/2" SLICES ON A DIAGONAL. RETURN TO BAKING SHEET AND BAKE UNTIL TOASTED, ABOUT 20 TO 30 MINUTES.
