ORANGE ALMOND BISCOTTI
List of Ingredients
- 2 CUPS FLOUR
- 1/4 TEASPOON BAKING SODA
- 1/4 TEASPOON BAKING POWDER
- 1/4 TEASPOON SALT
- 3 EGGS
- 2/3 CUPS SUGAR
- 1 TEASPOON VANILLA
- 3/4 TEASPOON ALMOND EXTRACT
- GRATED ORANGE ZEST
- 1 CUP TOASTED WHOLE ALMONDS
Instructions
- PREHEAT OVEN TO 350°. LINE A BAKING SHEET WITH PARACHMENT PAPER AND SET ASIDE.
- IN A SIFTER, COMBINE FLOUR, BAKING POWDER, BAKING SODA AND SALT IN A BOWL.
- IN A SMALL BOWL, COMBINE EGGS, SUGAR, VANILLA, ALMOND EXTRACT AND ORANGE ZEST..
- SLOWLY POUR LIQUID INTO DRY MIXTURE AND MIX UNTIL COMBINED ( IF NECESSARY ADD A BIT MORE FLOUR TO MAKE A WORKABLE DOUGH). ADD NUTS AND WORK IN WELL.
- PLACE DOUGH ONTO A LIGHTLY FLOURED SURFACE AND DIVIDE IN HALF WITH FLOURED HANDS.
- ROLL EACH PIECE INTO A LOG ABOUT 2" WIDE AND 12" LONG.
- TRANSFER TO BAKING SHET. BAKE IN CENTER OF OVEN AND BAKE UNTIL DOUGH HAS RISEN SLIGHTLY AND TURNS LIGHTLY BROWN, 25 TO 30 MINUTES. REMOVE AND COOL 10 MINUTES.
- REMOVE DOUGH TO A CUTTING BOARD AND SLICE AT A DIAGONAL ABOUT A 1/2" THICK. STAND UPRIGHT ON BAKING SHEET 1/2" APART AND RETURN TO OVEN AND BAKE UNTIL GOLDEN BROWN, 15 MINUTES. REMOVE AND COOL. STORE IN AIRTIGHT CONTAINER.
