    APPLE PANCAKE CASSEROLE

    I MAKE THIS OFTEN ON WEEKENDS. IT IS DELICIOUS AND VERY SATISFYING.


    List of Ingredients


    • 2 TABLESPOONS BUTTER
    • 3 LARGE APPLES, PEELED, CORED, THINLY SLICED
    • 6 TABLESPOONS SUGAR
    • 1 TEASPOON GROUND CINNAMON
    • 3 EGGSS
    • 1/2 CUP FLOUR
    • 1/2 CUP MILK
    • 1 TABLESPOON SOUR CREAM
    • 1/4 TEASPOON SALT
    • 1 TEASPOON GRATED LEMON ZEST
    • CONFECTIONERS' SUGAR


    Instructions


    1. PREHEAT OVEN TO 400°.MELT BUTTER IN A SAUTE PAN OVER MEDIUM HEAT. ADD APPLES, SUGAR AND CINNAMON AND SAUTE UNTIL THE APPLES BEGIN TO SOFTEN AND BROWN LIGHTLY. REMOVE FROM HEAT AND PLACE IN AN OVENPROOF 3 QUART CASSEROLE PAN.

    2. BEAT EGGS IN A LARGE BOWL UNTIL FROTHY. ADD FLOUR, MILK, SOUR CREAM, SALT AND LEMON ZEST AND BEAT JUST UNTIL A SMOOTH BATTER IS ACHIEVED.

    3. POUR BATTER OVER APPLES IN THE CASSEROLE DISH, THEN PLACE IN PREHEATED OVEN. BAKE UNTIL GOLDEN BROWN AND SIDES ARE PUFFED, APPROXIMATELY 25 MINUTES. REMOVE FROM OVEN DUST WITH CONFECTIONERS' SUGAR AND SERVE IMMEDIATELY.
