    FRIED DROP CAKES

    THIS IS AN OLD RECIPE FROM 1994. THESE DROP CAKES ARE DELICIOUS AND LIGHT.


    List of Ingredients


    • 2 EGG YOLKS
    • 1/4 CUP SUGAR
    • 1 CUP SIFTED CAKE FLOUR, SIFT BEFORE MEASURING
    • 1/4 TEASPOON BAKING POWDER
    • 1/8 TEASPOON SALT
    • 1/2 CUP HALF AND HALF OR MILK
    • 2 BEATEN STIFFLY EGG WHITES
    • SHORTENING FOR FRYING
    • SUGAR OR CONFECTIONERS' SUGAR FOR DUSTING


    Instructions


    1. MELT SHORTENING IN A LARGE PAN 1/2" DEEP.
    2. BEAT YOLKS WITH SUGAR.SET ASIDE
    3. COMBINE FLOUR, BAKING POWDER AND SALT, ADD TO EGG MIXTURE, ALTERNATING WITH 1/2 AND 1/2 OR MILK.
    4. FOLD IN EGG WHITES IN A OVER AND UNDER MOTION WITH A RUBBER SPATULA UNTIL TOTALLY INCORPORATED.
    5. DROP BY TABLESPOONFUL INTO HOT SHORTENING AND FRY ABOUT 2 MINUTES ON BOTH SIDES UNTIL LIGHTLY GOLDEN.
    6. REMOVE WITH A SLOTTED SPOON ONTO PAPER TOWELS. DUST WITH SUGAR OR CONFECTIONERS' SUGAR.
    7. NOTE: MAKE SURE THAT WHITES ARE TOTALLY INCORPORATED OR IT WILL EXPLODE FROM THE HOT HEAT.
