    POTATO PIE

    THIS POTATO PIE IS DELICIOUS. I SERVE IT IN THE MORNING FOR BREAKFAST AND SUNDAY BRUNCH ALONG WITH EGGS AND BACON.


    List of Ingredients


    • 2 CUPS PEELED AND SHREDDED POTATOES
    • 1 1/4 CUPS SHREDDED CHEDDAR CHEESE
    • 3/4 CUPS SHREDDED MONTEREY JACK CHEESE
    • 1 TEASPOON SALT, DIVIDED
    • 5 EGGS
    • 1/2 CUP MILK
    • 1/2 TEASPOON PEPPER


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. COMBINE POTATOES, 1/2 CUP CHEDDAR CHEESE AND 1/2 TEASPOON SALT. PRESS INTO THE BOTTOM AND UP SIDES OF A GREASED 9" PIE PLATE.
    3. IN A MEDIUM BOWL, BEAT EGGS WITH MILK. ADD REMAINING CHEESES, SALT AND PEPPER, POUR OVER POTATO CRUST.
    4. BAKE FOR 45 TO 50 MINUTES OR UNTIL KNIFE INSERTED IN THE CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND LET STAND 5 MINUTES BEFORE CUTTING.
