POTATO PIE
THIS POTATO PIE IS DELICIOUS. I SERVE IT IN THE MORNING FOR BREAKFAST AND SUNDAY BRUNCH ALONG WITH EGGS AND BACON.
List of Ingredients
- 2 CUPS PEELED AND SHREDDED POTATOES
- 1 1/4 CUPS SHREDDED CHEDDAR CHEESE
- 3/4 CUPS SHREDDED MONTEREY JACK CHEESE
- 1 TEASPOON SALT, DIVIDED
- 5 EGGS
- 1/2 CUP MILK
- 1/2 TEASPOON PEPPER
Instructions
- PREHEAT OVEN TO 350°.
- COMBINE POTATOES, 1/2 CUP CHEDDAR CHEESE AND 1/2 TEASPOON SALT. PRESS INTO THE BOTTOM AND UP SIDES OF A GREASED 9" PIE PLATE.
- IN A MEDIUM BOWL, BEAT EGGS WITH MILK. ADD REMAINING CHEESES, SALT AND PEPPER, POUR OVER POTATO CRUST.
- BAKE FOR 45 TO 50 MINUTES OR UNTIL KNIFE INSERTED IN THE CENTER COMES OUT CLEAN. REMOVE FROM OVEN AND LET STAND 5 MINUTES BEFORE CUTTING.
