HAM AND CHEESE BRUNCH MUFFINS
List of Ingredients
- 1 1/2 CUPS FLOUR
- 1/3 CUPS GRATED PARMESAN CHEESE
- 1/3 CUP DICED LEAN HAN/AND OR COOKED, DRAINED SAUSAGE
- 1/4 CUP EACH FINELY CHOPPED GREEN ONION AND CHOPPED RED PEPPER
- 2 TEASPOONS BAKING POWDER
- 2 TESPOONS THYME
- 1 TEASPOON SUGAR
- 1/4 TEASPOON SALT
- 1/4 TESPOON PEPPER
- 1 CUP MILK
- 1/3 CUP VEGETABLE OIL
- 1 EGG
- 1/4 CUP SHREDDED CHEDDAR CHEESE
Instructions
- PREHEAT OVEN TO 375°.GREASE SIX MUFFIN TINS. SET ASIDE.
- IN A LARGE BOWL, STIR TOGETHER FLOUR, PARMESAN, HAM, RED PEPPER, GREEN ONION, BAKING POWDER, THYME, SUGAR, SALT AND PEPPER.
- IN A SMALL BOWL, WHISK TOGETHER MILK, OIL AND EGG. POUR INTO DRY INGREDIENTS.
- MIX WITH A WOODEN SPOON JUST UNTIL COMBINED. DO NOT OVER MIX. SPOON INTO GREASED MUFFIN TINS. SPRINKLE EACH MUFFIN WITH AND EQUAL AMOUNT OF CHEESE AND BAKE FOR ABOUT 20 MINUTES OR UNTIL GOLDEN BROWN AND TESTER INSERTED IN MIDDLE COME OUT CLEAN.
- 6 LARGE MUFFINS, OR 12 SMALL
- THIS RECIPE CAN BE DOUBLED. YOU CAN MAKE THESE AHEAD OF TIME, COVER AND FREEZE AND TAKE THEM OUT AND WARM BEFORE SERVING FOR BRUNCH.
