    CRISCO YELLOW CAKE AND FROSTING

    THIS IS AN OLD RECIPE WHICH COMES FROM CRISCO. I HAVE MADE THIS IT SEEMS LIKE FOREVER. WONDERFUL AND DELICIOUS.


    List of Ingredients


    • 2 1/2 CUPS SIFTED CAKE FLOUR, SIFT FIRST, THEN MEASURE
    • 1 2/3 CUPS SUGAR
    • 3 1/2 TEASPOONS BAKING POWDER
    • 1 TEASPOON SALT
    • 3/4 CUPS 1/2 AND 1/2 OR MILK
    • 2/3 CUPS CRISCO SHORTENING
    • 3 EGGS
    • 1/2 CUP MILK
    • 1 TEASPOON VANILLA


    Instructions


    1. PREHEAT OVEN TO 350°LIGHTLY GREASE A 9" ROUND CAKE PAN OR A 9 X 13" PAN.
    2. COMBINE FLOUR, SUGAR, BAKING POWDER AND SALT. ADD CRISCO AND 3/4 CUPS MILK, BEATING 2 MINUTES ON MEDIUM SPEED, ADD EGGS, 1/2 CUP MILK AND VANILLA, BEATING 2 MINUTES LONGER.
    3. POUR INTO PAN AND BAKE 35 TO 40 MINUTES, OR UNTIL CAKE TESTER COMES OUT CLEAN AND SIDES PULL AWAY FROM SIDES. COOL IN PAN 10 MINUTES, THEN COOL COMPLETELY ON A WIRE RACK. YOU CAN SPLIT CAKE IN HALF AND FROST OR LEAVE WHOLE.
    4. UNSWEETENED CHOCOLATE FROSTING:

      1 1/2 SQUARES UNSWEETENED CHOCOLATE
      3 TABLESPOONS CRISCO SHORTENING
      2 1/4 CUPS CONFECTIONERS' SUGAR
      1 1/2 TEASPOONS VANILLA
      3 TABLESPOONS HOT WATER


      MELT TOGETHER THE CRISCO AND CHOCOLATE TILL SMOOTH. REMOVE FROM HEAT IMMEDIATELY AND ADD CONFECTIONERS SUGAR, VANILLA AND 2 TABLESPOONS HOT WATER. BEAT WITH AN ELECTRIC MIXER UNTIL SMOOTH, ADD 1 TABLESPOON OF REMAINING HOT WATER TO MAKE A SOFT POURABLE CONSISTENCY. ( FROSTING WILL FIRM AND SET UP.)

      THIS FROSTING IS GREAT FOR PETTI FOURS.
    5. MILK CHOCOLATE FROSTING:


      3 TABLESPOONS CRISCO SHORTENING
      2 TABLESPOONS COCOA POWDER
      1 1/2 CUPS CONFECTIONERS' SUGAR
      2 TABLESPOONS 1/2 AND 1/2 OR MILK
      1 TEASPOON VANILLA


      MELT CRISCO, STIR IN COCOA POWDER TILL DISSOLVED, STIR IN CONFECTIONERS SUGAR, MILK AND VANILLA. BEAT TILL SMOOTH, ADD MORE 1/2 AND 1/2 OR MILK IF NECESSARY TO MAKE A CREAMY SOFT FROSTING.
    6. CREAMY VANILLA FROSTING:

      1/2 CUP MILK
      1 TABLESPOON CORNSTARCH
      1/2 CUP CRISCO
      1 CUP CONFECTIONERS SUGAR
      1 1/2 TEASPOON VANILLA
      1/2 TEASPOON SALT
      1 1/2 CUPS CONFECTIONERS'SUGAR


      IN A SAUCEPAN, BLEND COLD MILK AND CORNSTARCH. COOK AND STIR OVER LOW HEAT TILL BUBBLY AND THICKENED. COOL.
    7. CREAM SHORTENING AND 1 CUP CONFECTIONERS' SUGAR TILL FLUFFY, BEAT IN COOLED CORNSTARCH MIXTURE, VANILLA AND SALT TILL SMOOTH, ADD 1 1/2 CUPS CONFECTIONERS' SUGAR, BEATING TILL CREAMY AND SMOOTH.
