    DELICIOUS CARMEL APPLE CAKE

    THIS IS A MUST TRY CAKE. IT IS DELICIOUS AND VERY TASTY. THIS IS A VERY MUCH REQUESTED CAKE BY MY FAMILY AND FRIENDS.


    List of Ingredients


    • 1 1/2 CUPS VEGETABLE OIL
    • 1 1/2 CUPS SUGAR
    • 1/2 CUP PACKED BROWN SUGAR
    • 3 EGGS
    • 3 CUPS FLOUR
    • 2 TEASPOONS GROUND CINNAMON
    • 1/2 TEASPOON GROUND NUTMEG
    • 1 TEASPOON BAKING SODA
    • 1/2 TEASPOON SALT
    • 3 1/2 CUPS DICED, PEELED AND CORED APPLES
    • 1 CUP CHOPPED WALNUTS OR PECANS
    • 2 TEASPOONS VANILLA EXTRACT
    • CARAMEL ICING:
    • 1/2 CUP PACKED BROWN SUGAR
    • 1/3 CUP LIGHT CREAM
    • 1/4 CUP BUTTER OR MARGARINE
    • DASH OF SALT
    • 1 CUP CONFECTIONERS' SUGAR
    • CHOPPED NUTS


    Instructions


    1. PREHEAT OVEN TO 325°. GREASE AND FLOUR A 10" TUBE PAN WITH A REMOVEABLE BOTTOM. SET ASIDE.
    2. COMBINE OIL, SUGAR AND BROWN SUGAR IN A MIXING BOWL, MIX WELL. ADD EGGS ONE AT A TIME, BEATING WELL AFTER EACH ADDITION.
    3. COMBINE THE DRY INGREDIENTS AND ADD TO THE BATTER AND STIR WELL.
    4. FOLD IN THE APPLES, NUTS AND VANILLA. POUR INTO PREPARED TUBE PAN AND BAKE FOR 1 1/2 HOURS OR UNTIL CAKE TESTER INSERTED IN CENTER COMES OUT CLEAN.
    5. REMOVE FROM OVEN AND PLACE ON A WIRE RACK TO COOL FOR 10 MINUTES, REMOVE CAKE FROM PAN GENTLLY AND PLACE ON WIRE RACK TO COOL COMPLETELY. TURN CAKE TOP SIDE UP.
    6. CARMEL ICING:

      IN THE TOP OF DOUBLE BOILER OVER SIMMERING WATER, HEAT BROWN SUGAR, CREAM, BUTTER AND SALT UNTIL SUGAR IS DISSOLVED. COOL TO ROOM TEMPERATURE. BEAT IN THE CONFECTIONERS' SUGAR UNTIL SMOOTH. DRIZZLE OVER CAKE AND SPRINKLE WITH NUTS.
    7. YIELDS: 12 TO 16 SERVINGS.
