HAWAIIAN CAKE
THIS IS A HEALTHY, LOW FAT CAKE. YUMMY IS THE WAY I WOULD DESCRIBE IT.
List of Ingredients
- 1 LEMON CAKE MIX
- 1/2 CUP UNSWEETENED APPLESAUCE
- 1/2 CUP SKIM MILK OR 2%
- 4 EGG WHITES
- 11 OZ. CAN MANDARIN ORANGES
- 8 OUNCE CAN OF CRUSHED PINEAPPLE WITH JUICES
- 8 OUNCE VANILLA FAT FREE YOGURT
- 1 BOX VANILLA INSTANT PUDDING MIX, F/F OR S/F
- 4 OUNCES COOL WHIP FREE
Instructions
- BEAT EGG WHITES UNTIL FOAMY. DRAIN ORANGE JUICE INTO EGGS. ADD MILK AND APPLESAUCE. BEAT 30 SECONDS. ADD DRY CAKE MIX AND BEAT 2 MINUTES.
- POUR INTO A 9 X 13" BAKING PAN, SPRAYED WITH A VEGETABLE SPRAY. ARRANGE MANDARIAN ORANGE SLICES ON TOP OF CAKE BATTER.
- BAKE IN A PREHEATED 350° OVEN FOR APPROXIMATELY 35 MINUTES. REMOVE FROM OVEN AND PLACE ON WIRE RACK AND COOL COMPLETELY.
- TO MAKE TOPPING, STIR PINEAPPLE WITH JUICE AND YOGURT TOGETHER. ADD PUDDING MIX AND BEAT 1 MINUTE ( MIXTURE WILL BE STIFF). GENTLY FOLD IN COOL WHIP AND FROST TOP OF COOLED CAKE. REFRIGERATE UNTIL READY TO SERVE.
