    HAWAIIAN CAKE

    THIS IS A HEALTHY, LOW FAT CAKE. YUMMY IS THE WAY I WOULD DESCRIBE IT.


    List of Ingredients


    • 1 LEMON CAKE MIX
    • 1/2 CUP UNSWEETENED APPLESAUCE
    • 1/2 CUP SKIM MILK OR 2%
    • 4 EGG WHITES
    • 11 OZ. CAN MANDARIN ORANGES
    • 8 OUNCE CAN OF CRUSHED PINEAPPLE WITH JUICES
    • 8 OUNCE VANILLA FAT FREE YOGURT
    • 1 BOX VANILLA INSTANT PUDDING MIX, F/F OR S/F
    • 4 OUNCES COOL WHIP FREE


    Instructions


    1. BEAT EGG WHITES UNTIL FOAMY. DRAIN ORANGE JUICE INTO EGGS. ADD MILK AND APPLESAUCE. BEAT 30 SECONDS. ADD DRY CAKE MIX AND BEAT 2 MINUTES.
    2. POUR INTO A 9 X 13" BAKING PAN, SPRAYED WITH A VEGETABLE SPRAY. ARRANGE MANDARIAN ORANGE SLICES ON TOP OF CAKE BATTER.
    3. BAKE IN A PREHEATED 350° OVEN FOR APPROXIMATELY 35 MINUTES. REMOVE FROM OVEN AND PLACE ON WIRE RACK AND COOL COMPLETELY.
    4. TO MAKE TOPPING, STIR PINEAPPLE WITH JUICE AND YOGURT TOGETHER. ADD PUDDING MIX AND BEAT 1 MINUTE ( MIXTURE WILL BE STIFF). GENTLY FOLD IN COOL WHIP AND FROST TOP OF COOLED CAKE. REFRIGERATE UNTIL READY TO SERVE.
