    • 18 1/4 OUNCE YELLOW CAKE MIX, DIVIDED
    • 2 LARGE EGGS
    • 1 2/3 CUPS LIBBY'S PUMPKIN PUREE
    • 2 TEASPOONS PUMPKIN SPICES
    • 1/3 CUPS FLAKED COCONUT
    • 1/4 CUP CHOPPED NUTS
    • 3 TABLESPOONS SOFT BUTTER OR MARGARINE


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE A 13 X 9" BAKING PAN. SET ASIDE.
    2. COMBINE 3 CUPS OF YELLOW CAKE MIX, EGGS, PUMPKIN AND PUMPKIN PIE SPICES IN A LARGE MIXER BOWL. BEAT ON LOW SPEED UNTIL MOISTENED. BEAT ON MEDIUM SPEED FOR 2 MINUTES. POUR INTO PREPARED BAKING PANS. SET ASIDE.
    3. COMBINE REMAINING CAKE MIX, COCONUT AND NUTS IN A SMALL BOWL, CUT IN BUTTER WITH A PASTRY KNIFE OR YOUR FINGERS UNTIL MIXTURE IS CRUMBLY. SPRINKLE OVER BATTER.
    4. BAKE FOR 30 TO 35 MINUTES OR UNTIL WOODEN PICK INSERTED IN CENTER COMES OUT CLEAN. COOL PAN ON A WIRE RACK.
