SPONGE CAKE
I HAVE MADE THIS DELICATE SPONGE CAKE MANY A TIMES. IT IS VERY DELICIOUS. I FOUND THIS RECIPE ON THE BACK OF DOMINO SUGAR.
List of Ingredients
- 6 EGGS, SEPARATED
- 2 TABLESPOONS LEMON JUICE
- 3/4 TEASPOON GRATED LEMON RIND
- 3/4 TESPOONS ALMOND EXTRACT
- 1/2 TEASPOON SALT
- 1 1/4 CUPS DOMINO SUPERFINE SUGAR, DIVIDED
- 1 1/4 CUPS CAKE FLOUR
- 1/2 TEASPOONS CREAM OF TARTAR
Instructions
- PREHEAT OVEN TO 325°
- COMBINE EGG YOLKS, LEMON JUICE, LEMON RIND, ALMOND EXTRACT AND SALT IN A SMALL MIXING BOWL. GRADUALLY ADD 3/4 CUPS SUGAR, BEATING AT LOW SPEED. INCREASE TO MEDIUM SPEED; BEAT UNTIL MIXTURE THICKENS SLIGHTLY AND DOUBLES IN VOLUME ( ABOUT 5 MINUTES).
- SPRINKLE 1/4 CUP OF FLOUR OVER EGG YOLK MIXTURE; FOLD IN UNTIL COMBINED. REPEAT WITH REMAINING FLOUR, 1/4 CUP AT A TIME. SET EGG YOLK MIXTURE ASIDE.
- BEAT EGG WHITES AND CREAM OF TARTAR IN A LARGE BOWL UNTIL SOFT PEAKS FORM. GRADUALLY ADD REMAINING SUGAR, BEATING ON HIGH SPEED. CONTINUE ADDING SUGAR GRADUALLY, 1 TABLESPOON AT A TIME UNTIL STIFF PEAKS FORM. FOLD 1 CUP OF BEATEN EGG WHITE MIXTURE INTO EGG YOLK MIXTURE; FOLD YOLK MIXTURE INTO REMAINING EGG WHITE MIXTURE. POUR INTO UNGREASED 10" TUBE PAN.
- BAKE ABOUT 55 TO 60 MINUTES OR UNTIL CAKE SPRINGS BACK WHEN LIGHTLY TOUCHED. IMMEDIATELY INVERT CAKE ( LEAVE IN PAN); COOL THOROUGHLY. LOOSEN SIDES FROM PAN BY RUNNING A SHARP THIN BLADED KNIFE AROUND SIDE OF PAN. PLACE ON SERVING PLATTER. MAKES 12 SERVINGS.
- SUGAR GLAZE:
- COMBINE 1 CUP DOMINO CONFECTIONERS SUGAR AND 2 TABLESPOONS MILK IN A BOWL, UNTIL WELL COMBINED. DRIZZLE OVER CAKE.
