    I HAVE MADE THIS DELICATE SPONGE CAKE MANY A TIMES. IT IS VERY DELICIOUS. I FOUND THIS RECIPE ON THE BACK OF DOMINO SUGAR.


    List of Ingredients


    • 6 EGGS, SEPARATED
    • 2 TABLESPOONS LEMON JUICE
    • 3/4 TEASPOON GRATED LEMON RIND
    • 3/4 TESPOONS ALMOND EXTRACT
    • 1/2 TEASPOON SALT
    • 1 1/4 CUPS DOMINO SUPERFINE SUGAR, DIVIDED
    • 1 1/4 CUPS CAKE FLOUR
    • 1/2 TEASPOONS CREAM OF TARTAR


    Instructions


    1. PREHEAT OVEN TO 325°
    2. COMBINE EGG YOLKS, LEMON JUICE, LEMON RIND, ALMOND EXTRACT AND SALT IN A SMALL MIXING BOWL. GRADUALLY ADD 3/4 CUPS SUGAR, BEATING AT LOW SPEED. INCREASE TO MEDIUM SPEED; BEAT UNTIL MIXTURE THICKENS SLIGHTLY AND DOUBLES IN VOLUME ( ABOUT 5 MINUTES).
    3. SPRINKLE 1/4 CUP OF FLOUR OVER EGG YOLK MIXTURE; FOLD IN UNTIL COMBINED. REPEAT WITH REMAINING FLOUR, 1/4 CUP AT A TIME. SET EGG YOLK MIXTURE ASIDE.
    4. BEAT EGG WHITES AND CREAM OF TARTAR IN A LARGE BOWL UNTIL SOFT PEAKS FORM. GRADUALLY ADD REMAINING SUGAR, BEATING ON HIGH SPEED. CONTINUE ADDING SUGAR GRADUALLY, 1 TABLESPOON AT A TIME UNTIL STIFF PEAKS FORM. FOLD 1 CUP OF BEATEN EGG WHITE MIXTURE INTO EGG YOLK MIXTURE; FOLD YOLK MIXTURE INTO REMAINING EGG WHITE MIXTURE. POUR INTO UNGREASED 10" TUBE PAN.
    5. BAKE ABOUT 55 TO 60 MINUTES OR UNTIL CAKE SPRINGS BACK WHEN LIGHTLY TOUCHED. IMMEDIATELY INVERT CAKE ( LEAVE IN PAN); COOL THOROUGHLY. LOOSEN SIDES FROM PAN BY RUNNING A SHARP THIN BLADED KNIFE AROUND SIDE OF PAN. PLACE ON SERVING PLATTER. MAKES 12 SERVINGS.
    6. SUGAR GLAZE:
    7. COMBINE 1 CUP DOMINO CONFECTIONERS SUGAR AND 2 TABLESPOONS MILK IN A BOWL, UNTIL WELL COMBINED. DRIZZLE OVER CAKE.
