4 EGGS
1 CUP VEGETABLE OIL OR CANOLA
1 CUP WATER
1 BOX ORANGE JELLO
1 BOX INSTANT VANILLA PUDDING

2 ( 6 OZ.) PACKAGES FROZEN COCONUT
1 ( 20 OZ.) CAN CRUSHED PINEAPPLE ( WELL DRAINED)
1 ( 8 OZ.) CONTAINER SOUR CREAM
2 CUPS SUGAR

1 ( 8 OZ.) CONTAINER COOL WHIP
1 CUP RESERVED FILLING
Instructions
MIX ORANGE CAKE, EGGS, OIL, WATER, JELLO AND PUDDING ON MEDIUM SPEED UNTIL COMBINED. POUT INTO 3 GREASED AND FLOURED 8 OR 9" ROUND CAKE PANS. BAKE IN A PREHEATED 350° OVEN FOR 30 MINUTES. REMOVE FROM OVEN AND COOL ON WIRE RACK.
FILLING:
COMBINE THE COCONUT, PINEAPPLE, SOUR CREAM AND SUGAR MIXING WELL TO COMBINE. RESERVE 1 CUP FILLING. SPREAD REMAINING FILLING BETWEEN COOLED LAYERS.
TOPPING:
MIX TOGETHER THE COOL WHIP AND THE RESERVED FILLING. SPREAD ON TOP AND SIDES OF CAKE. GARNISH WITH MANDARIN ORANGE SLICES ( OPTIONAL) REFRIGERATE
