List of Ingredients
- 1 ( 18.25 OUNCE) PACKAGE OF YELLOW CAKE
- 1 1/2 CUPS ( 12 OUNCES ) CARNATION EVAPORATED MILK
- 2 LARGE EGGS
- 1 ( 20 OUNCE CAN ) CRUSHED PINEAPPLE IN JUICE, DRAINED ( RESERVE LIQUID), DIVIDED
- 3/4 CUPS SIFTED CONFECTIONERS' SUGAR
- 1 CUP FLAKED COCONUT, TOASTED
- WHIPPED CREAM, OR COOL WHIP
Instructions
- PREHEAT OVEN TO 350°. GREASE A 13 X 9" BAKING PAN, SET ASIDE.
- COMMBINE CAKE MIX, EVAPORATED MILK AND EGGS IN A LARGE ELECTRIC MIXING BOWL. BEAT ON LOW SPEED 2 MINUTES. STIR IN 1 CUP PINEAPPLE. POUR BATTER INTO PREPARED BAKING PAN.
- BAKE FOR 30 TO 35 MINUTES OR UNTIL TESTER INSERTED IN CENTER COMES OUT CLEAN. COOL IN PAN ON A WIRE RACK FOR 15 MINUTES.
- COMBINE SUGAR AND 2 TABLESPOONS RESERVED PINEAPPLE JUICE IN A SMALL BOWL, MIXING UNTIL SMOOTH. SPREAD OVER WARM CAKE, SPRINKLE WITH COCONUT AND REMAINING PINEAPPLE. COOL COMPLETELY BEFORE SERVING. TOP WITH WHIPPED CREAM.

I HAVE MADE THIS CAKE MANY A TIMES AND MY FAMILY LOVES IT. IT IS A DELICIOUS DESSERT TO SERVE AFTER A NICE MEAL.
