    • 1/4 TEASPOON CREAM OF TARTAR
    • 1 TEASPOON GRATED LEMON PEEL
    • 1/4 CUP LEMON JUICE
    • 1 CUP MILK OR 1/2 AND 1/2
    • 1 CUP SUGAR
    • 1/4 CUP FLOUR
    • 1/4 TEASPOON SALT
    • WHIPPED TOPPING
    • MARASCHINO CHERRIES DRAINED


    Instructions


    1. BEAT EGG WHITES AND CREAM OF TARTAR INTO A 1 1/2 QUART BOWL UNTIL STIFF PEAKS FORM, SET ASIDE.
    2. BEAT EGG YOLKS SLIGHTLY. BEAT IN LEMON PEEL, LEMON JUICE AND MILK. ADD SUGAR, FLOUR AND SALT, BEATING UNTIL SMOOTH. FOLD INTO BEATEN EGG WHITES.
    3. POUR INTO 1 QUART MICROWAVABLE CASSEROLE DISH, SPRINKLE WITH COCONUT.
    4. POUR 1 CUP OF VERY HOT WATER INTO A 1 1/2 QUART CASSEROLE DISH. CAREFULLY SET CASSEROLE WITH PUDDING MIXTURE INTO THE 1 1/2 QUART CASSEROLE WITH HOT WATER.
    5. MICROWAVE UNCOVERED ON MEDIUM HIGH UNTL WOODEN PICK INSERTED IN CENTER COMES OUT CLEAN, 10 TO 12 MINUTES. GARNISH WITH WHIPPED TOPPING AND MARASCHINO CHERRIES.
