CHICKEN BROCCOLI CASSEROLE

- 1 LB. FRESH CROCCOLI
- 1 POUND BONELESS, SKINLESS CHICKEN BREASTS COOKED AND CUT INTO BITE SIZE PIECES
- 2 TEASPOONS LEMON JUICE
- 1/2 CUP MAYONNAISE
- 1 CAN CREAM OF CHICKEN SOUP
- SALT AND PEPPER TO TASTE
- CHEDDAR CHEESE GRATED
- BREAD CRUMBS, MIXED WITH MELTED BUTTER
Instructions
- PREHEAT OVEN TO 350°. BUTTER A CASSEROLE DISH AND SET ASIDE.
- MIX TOGETHER, CHICKEN SOUP, LEMON JUICE, MAYONNAISE, SALT AND PEPPER. SET ASIDE.
- COOK BROCCOLI TILL CRISP AND TENDER, DRAIN WELL. PLACE BROCCOLI SPEARS IN BUTTERED CASSEROLE DISH. PUT CHICKEN PIECES ON TOP OF BROCCOLI.
- SPOON CREAM SAUCE OVER MIXTURE EVENLY AND TOP WITH GREATED CHEESE. SPRINKLE THE TOP WITH BUTTERED BREAD CRUMBS. BAKE TILL BUBBLY ABOUT 40 TO 45 MINUTES.
- 4 TO 5 SERVINGS.
- ONCE THE CASSEROLE IS ASSEMBLED, YOU CAN COVER AND FREEZE UNTIL YOU ARE READY TO USE. REMOVE FROM FREEZER 1 HOUR BEFORE SERVING AND BAKE FOR ABOUT 1 HOUR UNTIL HOT AND BUBBLY.
