    SUPER DELICIOUS MACARONI AND CHEESE

    Recipe Introduction


    THIS IS MY FAVORITE MACARONI AND CHEESE RECIPE AND MY CHILDREN JUST GO NUTS OVER IT EVERYTIME I MAKE. MY SON ALWAYS REQUESTS THIS AS A SIDE DISH FOR THANKSGIVING. I HOPE THAT YOU ENJOY IT AS MUCH A WE DO.


    List of Ingredients


    • 8 TABLESPOONS BUTTER
    • 6 TABLESPOONS FLOUR
    • 1/2 TEASPOON CAYENNE PEPPER
    • SALT AND WHITE PEPPER
    • 3 3/4 CUPS HOT 1/2 N 1/2 OR MILK
    • 4 CUPS GRATED SHARP CHEDDAR CHEESE
    • 1 LB BOX ELBOW MACARONI, COOKED AND DRAINED
    • 1/2 CUP HEAVY CREAM
    • 3/4 TO 1 CUP OF SEASONED BREAD CRUMBS


    Instructions


    1. PREHEAT OVEN TO 350°.

    2. MELT 6 TABLESPOONS OF BUTTER IN A MEDIUM SAUCE PAN OVER LOW HEAT. ADD THE FLOUR AND COOK STIRRING COSTANTLY ABOUT 3 TO 4 MINUTES OR UNTIL THE MIXTURE FOAMS AS IT IS COOKING OR IT WILL HAVE A NASTY FLOUR TASTE. STIR IN THE CAYENNE AND SEASON TO TASTE WITH SALT AND PEPPER.

    3. WHISK IN HOT MILK A 1/2 CUP AT A TIME AND COOK STIRRING UNTIL MIXTURE THICKENS.

    4. REDUCE HEAT TO LOW AND STIR IN 2 CUPS OF CHEDDAR CHEESE. COOK UNTIL CHEESE MELTS, STIRRING OFTEN, THIS SHOULD TAKE ABOUT 2 TO 3 MINUTES.

    5. COMBINE PASTA AND CHEESE SAUCE IN A LARGE BOWL AND SEASON WITH ADDITIONAL SALT. SPRINKLE A 1/2 CUP OF CHEESE OVER THE BOTTOM OF A WELL BUTTERED 8 X 10" BAKING DISH.

    6. PLACE A THIRD OF THE PASTA IN DISH THEN TOP WITH 1/2 CUP OF CHEESE, REPEAT LAYERING PASTA AND CHEESE ENDING WITH CHEESE ON TOP MAKING THREE LAYERS TOTAL.

    7. POUR HEAVY CREAM OVER MACARONI AND CHEESE. MELT REMAINING BUTTER IN A SAUCE PAN, ADD BREAD CRUMBS AND MIX WELL. SPRINKLE OVER MACARONI AND CHEESE COVERING ENTIRE TOP.( I ALWAYS TRIPLE THE BREAD CRUMB TOPPING, BECAUSE MY FAMILY LOVES IT).

    8. BAKE UNTIL THE CRUST IS GOLDEN BROWN FOR APPROXIMATELY 25 TO 35 MINUTES. REMOVE FROM OVEN AND PLACE ON A WIRE RACK AND LET REST FOR 10 TO 15 MINUTES BEFORE SERVING.
