    List of Ingredients


    • 3/4 CUPS FLOUR
    • 3/4 CUPS FINELY CHOPPED PECANS
    • 1/2 STICK SWEET BUTTER MELTED
    • 3 TABLESPOONS SUGAR
    • 2 TABLESPOONS BROWN SUGAR PACKED
    • 1 1/2 TEASPOONS VANILLA
    • 16 OUNCES SOFTENED CREAM CHEESE, 2 PACKAGES OF 8 OUNCES
    • 1 1/4 CUPS SUGAR
    • 2 TABLESPOONS CORNSTARCH
    • 3 LARGE EGGS
    • 2 CUPS PUREED BANANAS, ABOUT 4
    • 1 CUP SOUR CREAM
    • 1 1/2 TABLESPOONS FRESH LEMON JUICE
    • 1 TEASPOON VANILLA
    • 1 TABLESPOON CINNAMON
    • PINCH OF SALT
    • 1 CUP SOUR CREAM
    • 1/4 CUP SUGAR
    • 1/4 TEASPOON VANILLA
    • 17 OUNCE JAR CARAMEL SAUCE
    • 2 TABLESPOONS DARK RUM
    • 2 BANANAS, PEELED AND SLICED AND SPRINKLED WITH FRUIT FRESH


    Instructions


    1. PREHEAT OVEN TO 350°. POSITION RACK IN CENTER OF OVEN.
    2. WRAP OUTSIDE OF AN 9" SPRINGFORM PAN WITH 3" HIGH SIDES WITH A HEAVY DUTY FOIL.
    3. COMBINE FLOUR, PECANS, BUTTER, SUGAR, BROWN SUGAR AND VANILLA IN A LARGE BOWL, MIX WELL. PRESS MIXTURE ONTO BOTTOM OF PREPARED PAN.
    4. BEAT CREAM CHEESE IN MIXING BOWL UNTIL SMOOTH. GRADUALLY BEAT IN SUGAR, BEAT IN CORNSTARCH AN ADD EGGS, ONE AT A TIME, BEATING JUST UNTIL BLENDED AFTER EACH ADDITION. ADD PUREED BANANA, SOUR CREAM, LEMON JUICE, VANILLA, CINNAMON AND SALT. BEAT JUST UNTIL COMBINED.
    5. POUR FILLING TO CRUST. PLACE PAN IN LARGE ROASTING PAN AND ADD ENOUGH HOT WATER TO ROASTING PAN TO COME 1" UP THE SIDES OF SPRINGFORM PAN.
    6. BAKE UNTIL CENTER OF CAKE IS JUST SET, ABOUT 1 HOUR AND 15 MINUTES.
    7. REMOVE CAKE FROM OVEN AND MAINTAIN OVEN TEMPERATURE.
    8. PREPARE THE TOPPING:
      MIX TOGETHER SOUR CREAM, SUGAR AND VANILLA IN A SMALL BOWL UNTIL WELL BLENDED. SPREAD OVER THE TOP OF THE CHEESECAKE. RETURN TO OVEN AND BAKE UNTIL TOPPING IS SET, ABOUT 10 MINUTES. TURN OFF OVEN AND LET CHEESECAKE STAND IN OVEN UNTIL COOLED TO ROOM TEMPERATURE, ABOUT 2 HOURS.
    9. COVER AND REFRIGERATE CHEESECAKE OVERNIGHT.
    10. RUN A KNIFE AROUND CHEESECAKE TO LOOSEN FROM SIDES, REMOVE THE RING. TRANSFER TO A PLATTER.
    11. WARM CARMEL SAUCE IN A SMALL SAUCEPAN OVER LOW HEAT, STIRRING OFTEN. MIX IN RUM. DRIZZLE SOME SAUCE DECORATIVELY OVER CHEESECAKE, ARRANGE BANANAS ON TOP . CUT INTO WEDGES AND SERVE WITH ADDITIONAL SAUCE.
