    BANANA CREAM CHEESECAKE


    List of Ingredients


    • 1 BOX YELLOW CAKE MIX
    • 4 EGGS
    • 3 TABLESPOONS CRISCO OIL
    • 1/3 CUP + 1/2 CUP PACKED BROWN SUGAR
    • 1 MEDIUM BANANA, PEELED AND SLICED
    • 2 ( 8 OUNCE) SOFTENED CREAM CHEESE
    • 1 1/2 CUPS 1/2 AND 1/2
    • 2 TABLESPOONS LEMON JUICE
    • 1 1/2 CUPS HEAVY WHIPPING CREAM WHIPPED OR 1 ENVELOPE OF DREAM WHIP MIX WHIPPED


    Instructions


    1. PREHEAT OVEN TO 300°.
    2. RESERVE 1 CUP OF DRY CAKE MIX. SET ASIDE.
    3. COMBINE REMAINING CAKE MIX, 1 EGG, OIL AND 1/3 CUP BROWN SUGAR IN A LARGE BOWL. ( MIXTURE WILL BE CRUMBLY). PRESS CRUST MIXTURE EVENLY INTO BOTTOM AND QUARTER OF THE WAY UP THE SIDES OF A GREASED 13 X 9 X 2" BAKING PAN.
    4. ARRANGE BANANA SLICES ON CRUST.
    5. IN SAME BOWL, BEAT CREAM CHEESE WITH 1/2 CUP BROWN SUGAR. ADD 3 EGGS AND RESERVED CAKE MIX, BEAT 1 MINUTE AT MEDIUM SPEED. TURN SPEED DOWN TO LOW AND SLOWLY ADD 1/2 AND 1/2 AND LEMON JUICE, BEATING UNTIL SMOOTH.
    6. POUR INTO CRUST AND BAKE FOR 45 TO 55 MINUTES OR UNTIL CENTER IS FIRM. REMOVE FROM OVEN TO A WIRE RACK AND COOL COMPLETELY. SPREAD WHIPPED TOPPING OVER CHEESECAKE AND CHILL IN REFRIGERATOR BEFORE SERVING.
    7. STORE ANY LEFTOVERS IN REFRIGERATOR.
