BASIC CHEESECAKE
FANTASTIC AND DELICIOUS.
List of Ingredients
- CRUST:
- 1 CUP GRAHAM CRACKER CRUMBS
- 3 TABLESPOONS SUGAR
- 3 TABLESPOONS MELTED BUTTER
- FILLING:
- 2 ( 8 OUNCE ) PACKAGES CREAM CHEESE, ROOM TEMPERATURE
- 1/2 CUP SUGAR
- 1 TABLESPOONS LEMON JUICE
- 1 TEASPOON GRATED LEMON RIND
- 1/2 TEASPOON VANILLA
- 2 EGGS, SEPARATED
- TOPPING:
- 1 CUP SOUR CREAM
- 2 TEASPOONS SUGAR
- 1 TEASPOON VANILLA
Instructions
- PREHEAT OVEN TO 325°.
- COMBINE CRUMBS, SUGAR AND BUTTER AND PRESS ONTO BOTTOM OF A 9" SPRINGFORM PAN. BAKE FOR 10 MINUTES. REMOVE FROM OVEN TO COOL.
- LOWER OVEN TEMPERATURE TO 300°.
- IN A LARGE MIXING BOWL BEAT SOFTENED CREAM CHEESE, SUGAR, LEMON JUICE, LEMON RIND AND VANILLA, MAXING AT MEDIUM SPEED UNTIL WELL BLENDED. ADD EGG YOLKS ONE AT A TIME, MIXING WELL AFTER EACH ONE.
- BEAT EGG WHITES UNTIL STIFF AND FOLD INTO CREAM CHEESE MIXTURE. POUR MIXTURE OVER CRUST. BAKE FOR 45 MINUTES.
- COMBINE SOUR CREAM, SUGAR AND VANILLA, MIXING TO BLEND. CAREFULLY SPREAD OVER CHEESECAKE AND CONTINUE BAKING 10 MINUTES LONGER.
- COOL CHEESECAKE ON A WIRE RACK. WHEN COOLED, LOOSEN THE RIM OF PAN AND REMOVE. CHILL IN REFRIGERATOR UNTIL READY TO SERVE. STORE LEFTOVERS IN REFRIGERATOR COVERED.
