    List of Ingredients


    • CRUST:
    • 1 CUP GRAHAM CRACKER CRUMBS
    • 3 TABLESPOONS SUGAR
    • 3 TABLESPOONS MELTED BUTTER
    • FILLING:
    • 2 ( 8 OUNCE ) PACKAGES CREAM CHEESE, ROOM TEMPERATURE
    • 1/2 CUP SUGAR
    • 1 TABLESPOONS LEMON JUICE
    • 1 TEASPOON GRATED LEMON RIND
    • 1/2 TEASPOON VANILLA
    • 2 EGGS, SEPARATED
    • TOPPING:
    • 1 CUP SOUR CREAM
    • 2 TEASPOONS SUGAR
    • 1 TEASPOON VANILLA


    Instructions


    1. PREHEAT OVEN TO 325°.
    2. COMBINE CRUMBS, SUGAR AND BUTTER AND PRESS ONTO BOTTOM OF A 9" SPRINGFORM PAN. BAKE FOR 10 MINUTES. REMOVE FROM OVEN TO COOL.
    3. LOWER OVEN TEMPERATURE TO 300°.
    4. IN A LARGE MIXING BOWL BEAT SOFTENED CREAM CHEESE, SUGAR, LEMON JUICE, LEMON RIND AND VANILLA, MAXING AT MEDIUM SPEED UNTIL WELL BLENDED. ADD EGG YOLKS ONE AT A TIME, MIXING WELL AFTER EACH ONE.
    5. BEAT EGG WHITES UNTIL STIFF AND FOLD INTO CREAM CHEESE MIXTURE. POUR MIXTURE OVER CRUST. BAKE FOR 45 MINUTES.
    6. COMBINE SOUR CREAM, SUGAR AND VANILLA, MIXING TO BLEND. CAREFULLY SPREAD OVER CHEESECAKE AND CONTINUE BAKING 10 MINUTES LONGER.
    7. COOL CHEESECAKE ON A WIRE RACK. WHEN COOLED, LOOSEN THE RIM OF PAN AND REMOVE. CHILL IN REFRIGERATOR UNTIL READY TO SERVE. STORE LEFTOVERS IN REFRIGERATOR COVERED.
    8. 10 TO 12 SERVINGS
