GERMAN CHOCOLATE CHEESECAKE

- 2/3 CUPS FLOUR
- 2 TABLESPOONS SUGAR
- 2 TABLESPOONS CHILLED BUTTER, CUT INTO SMALL PIECES
- 1 TABLESPOON ICE WATER
- COOKING VEGETABLE SPRAY

- FILLING:
- 1/2 CUP COCOA POWDER
- 1/2 CUP HOT FUDGE TOPPING
- 1/4 CUP MILK
- 3 ( 8 OUNCE ) SOFTENED CREAM CHEESE
- 4 OUNCES SOFTENED CREAM CHEESE
- 1 1/2 CUPS SUGAR
- 3 TABLESPOONS FLOUR
- 2 TEASPOONS VANILLA
- 1/4 TEASPOON COCONUT EXTRACT
- 4 LARGE EGGS
- ******************************************************************************
- TOPPING:
- 2/3 CUP CARMEL SUNDAE TOPPING
- 1/3 CUP CHOPPED TOASTED PECANS
- 1/3 CUP TOASTED FLAKED SWEETENED COCONUT
Instructions
- PREHEAT OVEN TO 400°.
- COMBINE FLOUR AND 2 TABLESPOONS SUGAR IN A FOOD PROCESSOR, PULSE UNTIL COMBINED. ADD BUTTER, PULSE 3 TIMES OR UNTIL THE MIXTURE RESEMBLES COARSE MEAL. WITH PROCESSOR RUNNING, POUR ICE WATER THROUGH THE CHUTE, PROSCESSING JUST UNTIL BLENDED ( DO NOT FORM A BALL), PRESS INTO BOTTOM OF A 9" SPRINGFORM PAN THAT WAS COATED WITH VEGETABLE COOKING SPRAY. BAKE FOR 8 MINUTES OR UNTIL LIGHTLY BROWNED. COOL ON A WIRE RACK.
- REDUCE OVEN TEMPERATURE TO 325°.
- IN A BOWL, COMBINE COCOA, FUDGE TOPPING AND MILK MIXING WELL. SET ASIDE.
- WITH ELECTRIC MIXER BEAT THE CREAM CHEESE AT HIGH SPEED UNTIL SMOOTH. ADD 1 1/2 CUPS SUGAR, 3 TABLESPOONS FLOUR AND EXTRACTS MIXING WELL. ADD EGGS, 1 AT A TIME, BEATING WELL AFTER EACH ADDITION. ADD CHOCOLATE MIXTURE, BEAT WELL.
- POUR MIXTURE INTO PREPARED PAN. BAKE AT 325° FOR 1 HOUR AND 5 MINUTES OR UNTIL ALMOST SET. ( CHEESECAKE IS DONE WHEN THE CENTER BARELY MOVES WHEN PAN IS TOUCHED OR JIGGLED. REMOVE FROM OVEN, COOL ON A WIRE RACK. WHEN COOLED, RUN A KNIFE AROUND THE OUTSIDE EDGES TO LOOSEN.
- IN A BOWL, COMBINE CARMEL SUNDAE TOPPING, CHOPPED PECANS AND TOASTED COCONUT MIXING WELL. SPREAD OVER COOLED CHEESECAKE. COVER WITH PLASTIC WRAP AND CHILL AT LEAST 8 HOURS OR OVER NIGHT.
