    ITALIAN CHICKEN ROLLS

    YOU CAN EXPERIMENT WITH USING WHATEVER TYPE OF CHEESE AND MEAT THAT YOU LIKE. I HAVE USED MOZZARELLA CHEESE FOR THE PROVOLONE( AND ON TIMES USED BOTH). IT TASTE DELICIOUS WITH HAM BUT IS EQUALLY DELICIOUS WITH GENOA SALAMI AND ESPECIALLY DELICIOUS WITH PROSCUITTO. HOWEVER YOU MAKE IT, IT'S SURE TO PLEASE.


    List of Ingredients


    • 8 BONELESS SKINLESS CHICKEN BREST HALVES, 2 POUNDS
    • 8 THIN SLICES HAM, GENOA SALAMI OR PROSCUITTO
    • 4 SLICE PROVOLONE CHEESE OR MOZZARELLA CHEESE HALVED
    • 2/3 CUPS SEASONED BREAD CRUMBS
    • 1/2 CUP GRATED ROMANO OR PARMESAN CHEESE
    • 1/4 CUP FRESH MINCED PARSLEY
    • 1/2 CUP MILK


    Instructions


    1. PREHEAT OVEN TO 425°.
    2. FLATTEN CHICKEN TO 1/4" THICK. PLACE A SLICE OF HAM AND HALF SLICE OF CHEESE ON EACH PIECE OF CHICKEN. ROLL UP FROM A SHORT SIDE AND TUCK IN ENDS, SECURE WITH ATOOTHPICK OR BUTCHER'S STRING.
    3. IN A SHALLOW BOWL, COMBINE CRUMBS, GRATED CHEESE AND PARSLEY.
    4. POUR MILK INTO ANOTHER BOWL. DIP CHICKEN ROLLS IN MILK, THEN ROLL IN CRUMB MIXTURE.
    5. PLACE SEAM SIDE DOWN IN A GREASED BAKING DISH OR PAN. SPRAY CHICKEN WITH BUTTER FLAVORED COOKING SPRAY. BAKE UNCOVERED FOR 25 MINUTES OR UTNIL JUICES RUN CLEAR. REMOVE TOOTHPICKS OR STRING BEFORE SERVING.
    6. SERVE WITH YUR FAVORITE PASTA AND SAUCE WITH A SALAD AND SOME CRUSTY FRENCH OR ITALIAN BREAD.
    7. ROLLS CAN BE WRAPPED AND FROZEN UP TO 2 MONTHS.
    8. TO USE FROZEN CHICKEN ROLLS, COMPLETELY THAW IN REFRIGERATOR. UNWRAP AND PLACE ON GREASED BAKING SHEET. SPRAY WITH BUTTER FLAVORED COOKING SPRAY AND BAKE UNCOVERED FOR 30 MINUTES OR UNTIL JUICES RUN CLEAR.
