BUTTERNUT COFFEE CAKE

- 1 CUP SUGAR
- 1 CUP FLOUR
- 1/2 TEASPOON EACH, BAKING POWDER, SALT, VANILLA EXTRACT
- 1/4 CUP BUTTER
- 1/4 CUP MILK
- 1 EGG
- 1/2 CUP COCONUT

- 1 CUP APPLE OR CHERRY PIE FILLING
- 1 TEASPOON CINNAMON
- ******************************************************************************
- 1/8 CUP BUTTER
- 1/2 CUP CONFECTIONERS' SUGAR
- 1/2 CUP FLOUR
- 1/4 TEASPOON EACH BAKING POWDER, SALT, VANILLA EXTRACT
- 1 EGG
- 1/2 CUP CHOPPED PECANS
Instructions
- PREHEAT OVEN TO 350°. GREASE A 9" CAKE PAN..
- IN A LARGE MIXING BOWL, COMBINE SUGAR, FLOUR, BAKING POWDER, SALT, VANILLA, BUTTER, MILK, EGG AND COCONUT, MIX UNTIL COMBINED. POUR BATTER INTO PREPARED PAN.
- SPREAD FRUIT ON TOP OF BATTER.
- COMBINE BUTTER, CONFECTIONERS' SUGAR, FLOUR, BAKING POWDER, SALT, VANILLA EXTRACT, EGG AND PECANS UNTIL ALL INGREDIENTS ARE COMBINED. SPRINKLE ON TOP OF FRUIT COVERING ENTIRE TOP.
- BAKE IN PREHEATED OVEN FOR APPROXIMATELY 30 MINUTES. REMOVE FROM OVEN AND ALLOW TO COOL COMPLETELY.
