    OLD FASHION CRUMB CAKE

    THIS IS ONE OF MY MOST FAVORITE COMFORT FOOD IN THE WHOLE WORLD, JUST GIVE ME A POT OF DELICIOUS COFFEE AND A BIG SLICE OF THIS WONDERFUL, TASTY AND DELICIOUS CRUMB CAKE. THERE IS NOT ALOT OF CAKE IN THIS RECIPE, BUT THERE ARE LOTS AND LOTS OF CRUMBS, AS THE NAME SAYS "CRUMB" CAKE. THE MORE CRUMBS ON THIS CAKE THE BETTER.


    List of Ingredients


    • 1 1/2 CUPS FLOUR
    • 1/2 CUP SUGAR
    • 2 1/2 TEASPOONS BAKING POWDER
    • 1/2 TEASPOON SALT
    • 1 LARGE EGG
    • 1/2 CUP MILK
    • 2 TABLESPOONS SMART BALANCE OIL OR CANOLA
    • 2 TEASPOONS VANILLA
    • CRUMB TOPPING RECIPE FOLLOWS*******


    Instructions


    1. IN A LARGE BOWL, SIFT TOGETHER THE FLOUR, SUGAR, BAKING POWDER AND SALT. SET ASIDE
    2. IN ANOTHER BOWL, WHISK TOGETHER THE EGG, MILK, OIL AND VANILLA.
    3. ADD THE LIQUID INGREDIENTS TO THE DRY INGREDIENT BOWL. USING A RUBBER SPATULA, MIX ALL INGREDIENTS TILL BLENDED. "DO NOT OVER MIX THE BATTER".
    4. SPRAY AND FLOUR A 9 X 13" BAKING PAN. POUR BATTER INTO PAN AND SPREAD OUT EVENLY. "IMPORTANT" ( BATTER WILL LOOK LIKE THERE ISN'T ENOUGH TO SPREAD, DON'T WORRY, IT WILL. TAKE A METAL SPATULA OR THE RUBBER SPATULA AND RUN IT UNDER HOT WATER, THEN SPREAD THE BATTER AS MUCH AS YOU CAN AND JUST REPEAT DOING THIS UNTIL YOU HAVE IT TOTALLY SPREAD OUT AND EVEN. REMEMBER, IT'S A CRUMB CAKE, ONCE IT IS BAKED, THE CAKE BASE WILL BE BETWEEN A 1/4 TO 1/2" THICK). SET ASIDE.



    5. *****CRUMB TOPPING:
    6. 2 1/2 TO 3 CUPS FLOUR
    7. 1 CUP LITE BROWN SUGAR PACKED
    8. 1 1/2 TEASPOONS CINNAMON
    9. 2 STICKS MELTED COOLED BUTTER
    10. MIX ALL THE INGREDIENTS IN A LARGE BOWL AND STIR WITH A WOODEN SPOON TILL WELL BLENDED. THEN TAKE YOUR HAND AND WORK THE MIXTURE TILL IT STARTS TO CLUMP.
    11. SPRINKLE CRUMBS EVENLY OVER TOP OF BATTER AND BAKE IN A PREHEATED 350° OVEN ON THE MIDDLE SHELF FOR APPROXIMATELY 30 TO 40 MINUTES, ROTATING THE PAN HALF WAY THROUGH THE BAKING.( REMEMBER EVERY OVEN IS DIFFERENT, SO AFTER 25 MINUTES CHECK THE CAKE) REMOVE THE CRUMB CAKE TO A WIRE RACK AND LET COOL. SPRINKLE WITH POWDERED SUGAR.( NOTE: IF YOU ADD MORE FLOUR THE CRUMBS WILL BE FIRMER AND NOT SOFT)


    Final Comments


    IF YOU REALLY, REALLY LOVE THE CRUMBS, YOU CAN DOUBLE THE CRUMB RECIPE AND ENJOY THIS OLD FASHION " COMFORT FOOD AT IT'S BEST". I HOPE YOU WILL ENJOY THIS AS MUCH AS I DO.

    PS: I ADD EXTRA FLOUR FOR A FIRMER CRUMB.
