PENNSYLVANIA DUTCH CRUMB CAKE

- 3 CUPS FLOUR
- 1 TABLESPOON BAKING POWDER
- 1 TEASPOON SALT
- 1 1/2 CUP SUGAR
- 2/3 CUP BUTTER
- 3 EGGS
- 1 CUP MILK
- 2 TEASPOONS VANILLA
Instructions
- PREHEAT OVEN TO 350°. BUTTER WELL 2 ( 9" ) CAKE PANS AND SET ASIDE.
- COMBINE DRY INGREDIENTS, THEN CUT IN BUTTER UNTIL A COARSE MEAL CONSISTENCY IS ACHIEVED. RESERVE 1 1/2 CUPS OF MIXTURE.
- TO REMAINING MIXTURE, ADD COMBINED EGGS, MILK AND VANILLA AND STIR INTO FLOUR MIXTURE, STIR WELL TO COMBINE.
- POUR INTO PREPARED PANS. SPRINKLE WITH RESERVED CRUMBS SPREADING EVENLY OVER TOPS OF BATTER. BAKE FOR 25 TO 30 MINUTES. REMOVE FROM OVEN AND COOL ON WIRE RACKS. DUST WITH CONFECTIONERS' SUGAR.
