    List of Ingredients


    • 1/4 CUP AND 1 TABLESPOON FLOUR
    • 3/4 CUP ALMONDS
    • 1/8 TEASPOON SALT
    • 1/4 CUP PLUS 3 TABLESPOONS SWEET BUTTER, SOFTENED
    • 1/2 CUP PLUS 1 TABLESPOON PACKED BROWN SUGAR
    • 2 EGGS
    • 1/4 TEASPOON VANILLA


    Instructions


    1. PREHEAT OVEN TO 325°. GREASE COOKIE SHEETS AND SET ASIDE.
    2. CREAM TOGETHER THE BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY. STIR IN EGGS AND VANILLA.
    3. SIFT TOGETHER THE FLOUR AND SALT AND ADD TO BUTTER MIXTURE, STIRRING WELL.
    4. CHOP ALMONDS IN A FOOD PROCESSOR UNTIL VERY FINE. ADD TO MIXTURE.
    5. DROP BY TEASPOONFULS ONTO COOKIE SHEETS ABOUT 5" APART. BAKE FOR 8 MINUTES, OR UNTIL EDGES BEGIN TO BROWN.
    6. AS SOON AS COOKIES ARE COOL ENOUGH TO HANDLE, ROLL EACH ONE AROUND THE HANDLE OF A ROUND WOODEN SPOON OR CLEAN PENCIL.
    7. IF COOKIES BECOME TO BRITTLE, REHEAT FOR A FEW SECONDS.
    8. 30 COOKIES
