ANGEL WHISPERS
List of Ingredients
- 3/4 PLUS 2 TABLESPOOONS BUTTER
- 1/2 CUP CONFECTIONERS' SUGAR
- 2 CUPS FLOUR
- 1 TEASPOON LEMON ZEST
- 1/4 TEASPOON SALT
- 1 EGG, BEATEN
- 1/3 CUP PLUS 1 TEASPOON SUGAR
- 1 1/2 TEASPOONS LEMON ZEST
- 2 TABLESLPOONS PLUS 2 1/2 TEASPOONS LEMON JUICE
- 1 TABLESPOON PLUS 1 TEASPOON BUTTER
Instructions
- PREHEAT OVEN TO 400°.
- CREAM TOGETHER THE BUTTER AND POWDERED SUGAR UNTIL LIGHT AND FLUFFY. STIR IN LEMON PEEL, FLOUR AND SALT. COVER BOWL, AND CHILL FOR 1 HOUR.
- DROP TEASPOONFULS OF DOUGH ONTO COOKIE SHEETS AND FLATTEN. BAKE FOR 5 TO 8 MINUTES, OR UNTIL LIGHTLY BROWNED. REMOVE FROM BAKING SHEETS TO A WIRE RACK TO COOL.
- FILLING:
- COMBINE THE BEATEN EGG, SUGAR, LEMON ZEST, LEMON JUICE AND BUTTER IN THE TOP OF A DOUBLE BOILER. STIR UNTIL THICK.
- SPREAD 1 TEASPOON OF FILLING ON TOP OF COOKIE,AND SANDWICH WITH SECOND COOKIE ON TOP.
