BISQUICK CREAM CHEESE COOKIES

- 1/2 CUP PACKED BROWN SUGAR
- 1/4 CUP SOFT MARGARINE
- 1 CUP BISQUICK
- 1/2 CUP CHOPPED NUT, YOUR CHOICE
- 8 OUNCES SOFTENED CREAM CHEESE
- 1/4 CUP SUGAR
- 1 TABLESPOON LEMON JUICE
- 2 TEASPOONS MILK
- 1/2 TEASPOON VANILLA
- 1 EGG
Instructions
- PREHEAT OVEN TO 350°. GREASE AN 8 X 8" BAKING PAN. SET ASIDE.
- BEAT BROWN SUGAR AND MARGARINE UNTILL LIGHT AND FLUFFY. STIR IN BISQUICK AND NUTS UNTIL MIXTURE IS CRUMBLY, RESERVE ONE CUP FOR TOPPING. PRESS REMAINING MIXTURE INTO PAN. BAKE FOR 12 MINUTES. REMOVE FROM OVEN TO COOL SLIGHTLY.
- IN A BOWL, BEAT CREAM CHEESE AND SUGAR, BEAT IN LEMON JUICE, MILK, VANILLA AND EGG UNTIL SMOOTH. SPREAD MIXTURE OVER LAYER IN PAN, SPRINKLE WITH RESERVED CRUMBS. BAKE UNTIL CENTER IS FIRM, APPROXIMATELY 25 MINUTES. REMOVE FROM OVEN AND COOL SLIGHTLY, CUT INTO 1 1/2 TO 2" SQUARES. STORE COOKIES IN REFRIGERATOR.
