    CHOCOLATE CHIP SHORTBREAD COOKIES


    List of Ingredients


    • 1 CUP SWEET SOFTENED BUTTER
    • 1/2 CUP CONFECTIONERS' SUGAR
    • 1 TEASPOON VANILLA
    • 2 CUPS FLOUR
    • 1 CUP MINI SEMISWEET CHOCOLATE CHIPS
    • 1 1/2 TEASPOONS VEGETABLE OIL


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. CREAM BUTTER, SUGAR AND VANILLA UNTIL WELL BLENDED. ON LOW SPEED, BEAT IN FLOUR. STIR IN 1/2 CUP CHOCOLATE CHIPS. COVER AND CHILL UNTIL FIRM BUT NOT TOO STIFF.
    3. SHAPE HEAPING TABLESPOONFUL INTO A 3" LONG LOG, ABOUT 1/2" THICK. PLACE ON LIGHTLY GREASED COOKIE SHEETS AND BAKE FOR 8 MINUTES OR UNTIL GOLDEN BROWN. COOL.
    4. MELT REMAINING CHOCOLATE CHIP AND OIL AND DIP 3/4" OF ONE END OF EACH COOKIE INTO MELTED CHOCOLATE.
    5. PLACE ON WIRE RACK UNTIL THEY SET. STORE BETWEEN WAX OR PARCHMENT PAPER.
