CHOCOLATE CHIP SHORTBREAD COOKIES
List of Ingredients
- 1 CUP SWEET SOFTENED BUTTER
- 1/2 CUP CONFECTIONERS' SUGAR
- 1 TEASPOON VANILLA
- 2 CUPS FLOUR
- 1 CUP MINI SEMISWEET CHOCOLATE CHIPS
- 1 1/2 TEASPOONS VEGETABLE OIL
Instructions
- PREHEAT OVEN TO 350°.
- CREAM BUTTER, SUGAR AND VANILLA UNTIL WELL BLENDED. ON LOW SPEED, BEAT IN FLOUR. STIR IN 1/2 CUP CHOCOLATE CHIPS. COVER AND CHILL UNTIL FIRM BUT NOT TOO STIFF.
- SHAPE HEAPING TABLESPOONFUL INTO A 3" LONG LOG, ABOUT 1/2" THICK. PLACE ON LIGHTLY GREASED COOKIE SHEETS AND BAKE FOR 8 MINUTES OR UNTIL GOLDEN BROWN. COOL.
- MELT REMAINING CHOCOLATE CHIP AND OIL AND DIP 3/4" OF ONE END OF EACH COOKIE INTO MELTED CHOCOLATE.
- PLACE ON WIRE RACK UNTIL THEY SET. STORE BETWEEN WAX OR PARCHMENT PAPER.
