    • 1 TEASPOON BAKING SODA
    • 2 CUPS QUICK OATS
    • 4 TEASPOONS VANILLA
    • 1 PACKAGE SEMI SWEET CHOCOLATE MORSELS OR MINI CHOCOLATE CHIPS
    • 1 CUP FLAKED COCONUT OPTIONAL
    • YOU CAN MAKE 1/2 THE DOUGH WITH COCONUT AND THE OTHER HALF WITHOUT, JUST DECREASE THE AMOUNT OF COCONUT

    Instructions

    1. PREHEAT OVEN TO 325°.
    2. CREAM THE BUTTER WITH THE CONFECTIONERS' SUGAR UNTIL BLENDED ADD THE VANILLA. MIX IN THE FLOUR AND BAKING SODA TO THE MIX AND BLEND WELL TO COMBINE. ADD THE OATS, CHOCOLATE CHIPS AND COCONUT ( OPTIONAL) AND BLEND IN WELL.
    3. FORM INTO SMALL BALLS AND PLACE ON A COOKIE SHEET, PRESS WITH A FORK OR BOTTOM OF A FLOURED GLASS.
    4. BAKE FOR 12 TO 15 MINUTES OR UNTIL GOLDEN.
    5. 11 DOZEN COOKIES

    Final Comments

THESE ARE NOT YOUR ORDINARY CHOCOLATE CHIP COOKIES, THEY MELT IN YOUR MOUTH AND EATING JUST ONE IS NOT ENOUGH. I PERFER USING THE MINI CHOCOLATE CHIPS WHICH GIVES THIS COOKIE A RICHER FLAVOR. THIS IS ONE OF MY ALL TIME FAVORITES.
