- 1 TABLESPOON INSTANT COFFEE GRANULES
- 2 TABLESPOONS HOT WATER
- 1 1/2 CUPS SWEET SOFTENED BUTTER
- 1 CUP CONFECTIONERS' SUGAR
- 3 CUPS FLOUR
- DASH SALT
- ***DRIZZLING ICING***
- 1 CUP SEMI SWEET CHOCOLATE CHIPS
- 1 TABLESPOON SHORTENING
Instructions
- PREHEAT OVEN TO 350°.
- COMBINE COFFEE AND HOT WATER IN A SMALL BOWL AND STIR UNTIL COFFEE IS DISSOLVED. SET AIDE.
- COMBINE BUTTER AND CONFECTIONERS' SUGAR IN A LARGE MIXING BOWL. BEAT ON MEDIUM SPEED, SCRAPING BOWL OFTEN UNTIL CREAMY ABOUT 2 TO 3 MINUTES. ADD COFFEE MIXTURE AND CONTINUE TO BEAT UNTIL WELL MIXED ABOUT 1 MINUTE. REDUCE TO LOW AND ADD FLOUR AND SALT. BEAT UNTIL WELL MIXED 2 TO 3 MINUTES.
- SHAPE DOUGH INTO 1" BALLS AND PLACE ON AN UNGREASED COOKIE SHEET. FLATTEN TO 2" ROUNDS WITH BOTTOM OF A GREASED AND FLOURED GLASS. BAKE FOR 11 TO 13 MINUTES OR UNTIL SET. COOL COMPLETELY.
- MELT CHOCOLATE CHIPS AND SHORTENING IN A DOUBLE BOILER UNTIL SMOOTH. DRIZZLE OVER COOLED COOKIES.
