1/2 CUP SOFTENED BUTTER
2 TABLESPOONS CONFECTIONERS' SUGAR
1/2 TEASPOON VANILLA
1 CUP FLOUR
3/4 CUPS FLAKED COCONUT
EXTRA CONFECTIONERS' SUGAR
Instructions
PREHEAT OVEN TO 350°.
COMBINE BUTTER, SUGAR AND VANILLA. CREAM UNTIL LIGHT AND FLUFFY. ADD FLOUR AND BLEND WELL. ADD COCONUT AND MIX UNTIL TOTALLY COMBINED.
SHAPE INTO SMALL BALLS AND PLACE ON UNGREASED BAKING SHEET. BAKE FOR 10 TO 12 MINUTES OR UNTIL LIGHTLY BROWNED. ROLL IN ADDITIONAL CONFECTIONERS' SUGAR WHILE WARM.
