HAWAIIAN SNOWBALL COOKIES

- 1 CUP ( 5 OUNCES) MACADAMIA NUTS
- 1/2 CUP CONFECTIONERS'S SUGAR, DIVIDED INTO 1/4 CUPS
- 1 CUP SWEET BUTTER
- 1 TEASPOON VANILLA
- 2 1/2 CUPS FLOUR
- ADDITIONAL 1 CUP CONFECTIONERS' SUGAR FOR ROLLING COOKIES
Instructions
- PREHEAT OVEN TO 350°.
- RUB THE MACADAMIA NUTS WITH A CLEAN KITCHEN TOWEL TO REMOVE ANY SALT. FINELY GRIND NUTS WITH 1/4 CUP CONFECTIONERS' SUGAR IN A FOOD PROCESSOR. SET ASIDE.
- BEAT REMAINING 1/4 CUP CONFECTIONERS' SUGAR WITH BUTTER AND VANILLA IN A MIXER BEATING UNTIL BLENDED. WITH MIXER AT LOW SPEED, STIR IN FLOUR AND GROUND NUTS TO BLEND WELL. GATHER DOUGH INTO A BALL.
- DIVIDE DOUGH AND ROLL INTO 1" BALLS, PLACE 1" APART ON UNGREASED BAKING SHEET.
- BAKE 12 TO 15 MINUTES OR UNTIL LIGHTLY GOLDEN BROWN ON BOTTOM. COOL JUST UNTIL WARM, ROLL IN ADDITIONAL 1 CUP CONFECTIONERS' SUGAR AND COOL COMPLETELY. BEFORE SERVING RE-ROLL IN COFECTIONERS' SUGAR.
