    LEMON COOKIES


    List of Ingredients


    • 1/2 CUP BUTTER, SWEET, SOFTENED.
    • 1 CUP SUGAR
    • 1 EGG
    • 2 TABLESPOONS LEMON JUICE
    • 2 TESPOONS GRATED LEMON PEEL
    • 2 CUPS FLOUR
    • 1 TEASPOON BAKING POWDER
    • 1/8 TEASPOON SALT
    • DASH NUTMEG, OPTIONAL


    Instructions


    1. PREHEAT OVEN TO 350°. GREASE COOKIE SHEETS AND SET ASIDE.

    2. BEAT BUTTER IN LARGE BOWL WITH AN ELECTRIC MIXER AT MEDIUM SPEED UNTIL SMOOTH. ADD SUGAR, BEAT UNTIL WELL BLENDED AND FLUFFY. ADD EGG, LEMON JUICE AND PEEL. BEAT UNTIL WELL BLENDED.

    3. COMBINE FLOUR, BAKING POWDER, SALT AND NUTMEG IF USING IN A LARGE BOWL. GRADUALLY ADD FLOUR MIXTURE TO BUTTER AT LOW SPEED, BLENDING WELL AFTER EACH ADDITION.

    4. SHAPE DOUGH INTO 2 LOGS EACH ABOUT 1 1/2" IN DIAMETER AND 6 /2" LONG. WRAP EACH LOG IN PLASTIC WRAP. REFRIGERATE 2 TO 3 HOURS OR UP TO 3 DAYS.

    5. CUT LOGS INTO 1/4" THICK SLICES, PLACE 1" APART ON COOKIE SHEETS.

    6. BAKE ABOUT 12 TO 15 MINUTES OR UNTIL EDGES ARE LIGHT BROWN. TRANSFER TO WIRE RACK TO COOL. STORE IN AIRTIGHT CONTAINER.
