    SOFT SUGAR COOKIES

    I LOVE THESE SOFT SUGAR COOKIES, THEY ARE DELICIOUS AND REMIND ME OF A TEA COOKIE MY MOTHER ALWAYS MADE.


    List of Ingredients


    • 4 CUPS FLOUR
    • 1 1/2 CUPS VEGETABLE OIL
    • 2 EGGS
    • 1 TEASPOON BAKING SODA
    • 1 CUP BUTTERMILK
    • 3/4 TEASPOON VANILLA
    • 1 1/2 CUPS SUGAR
    • 1 TEASPOON TEASPOON BAKING POWDER
    • 3/4 TEASPOON SALT


    Instructions


    1. PREHEAT OVEN TO 350°.
    2. IN A MIXING BOWL ADD VEGETABLE OIL, SUGAR AND EGGS. MIX UNTIL INCORPORATED.
    3. IN ANOTHER BOWL, COMBINE FLOUR, BAKING SODA, BAKING POWDER, BUTTERMILK, SALT AND VANILLA. POUR THE VEGETABLE, SUGAR, EGG MIXTURE AND MIX WELL.
    4. PLACE TEASPOONFULL AMOUNTS OF COOKIE BATTER ONTO A COOKIE SHEET, LEAVING PLENTY OF SPACE BETWEEN. BAKE 8 TO 10 MINUTES.
    5. REMOVE FROM OVEN AND LET COOL FOR 5 MINUTES. REMOVE TO A WIRE RACK AND ALLOW TO COOL COMPLETELY.


    Final Comments


    THESE COOKIES PUFF UP WHILE BAKING. I HAVE SANDWICHED THESE COOKIES WITH APRICOT FRUIT SPREAD OR CURRANT JELLY TO GIVE THEM A WONDERFUL FLAVOR. EITHER WAY YOU MAKE THEM, YOU WILL BE VERY PLEASED WITH THE RESULTS AND TASTE.
